Place in a slow cooker, along with other ingredients, onion, celery, garlic, tomatoes, beans, chicken, spices, and stock. Sundried tomatoes are super yummy (but optional).
Cook on high 3-4 hours, or on low 6-7 hours.
Shred chicken with 2 forks before serving.
Stove top with Rotisserie chicken:
Saute the onion, celery, garlic on medium heat until softened, about 4-5 minutes. Pour in the tomatoes beans, Rotisserie chicken and seasoning. Add the sundried tomatoes.
Bring to a soft boil, and then turn the heat down to LOW and simmer for about 15 minutes.
Serving:
Top with shaved Parmesan cheese and chopped red onions and enjoy! You can also add a dab of sour cream if you prefer.
