Preheat grill to medium heat.
In a fine mesh strainer, add the shredded zucchini and top with 1 Tbsp. of kosher salt. Allow zucchini to sit for 10 minutes in the strainer with a bowl underneath to catch water. When time has passed, form zucchini into two balls and squeeze the excess water from it with your hands. Set aside.
In a large mixing bowl, combine turkey, egg, bread crumbs, zucchini shreds, parsley, and remaining seasonings. Mix using your hands until ingredients are well combined (but not mixed into a paste). Using your hands or a burger presser, form meat into 12, 1’’ patties.
Spray both sides with oil then grill for about 3 minutes on each side, or until patties are no longer pink in the center.
Serve healthy and flavorful burgers with tomatoes, lettuce, your favorite sauce, avocado, and pickles.
