Summer Zucchini Turkey Burgers

Servings: 12
Prep Time: 30 mins
Cook Time: 10 mins
Total Time: 40 mins
Course: Main Course
Cuisine: American

  • 2 pounds ground turkey
  • 1 egg
  • 2 small zucchini, grated (about 1 cup squeezed)
  • 1/2 cup Panko bread crumbs
  • 2 tsp. garlic powder
  • 1 cup finely chopped parsley
  • 1 tsp. paprika, plus 1 tsp. (separate)
  • 1 Tbsp. kosher salt
  • 1 tsp. white pepper

  • Preheat grill to medium heat.
  • In a fine mesh strainer, add the shredded zucchini and top with 1 Tbsp. of kosher salt. Allow zucchini to sit for 10 minutes in the strainer with a bowl underneath to catch water. When time has passed, form zucchini into two balls and squeeze the excess water from it with your hands. Set aside.
  • In a large mixing bowl, combine turkey, egg, bread crumbs, zucchini shreds, parsley, and remaining seasonings. Mix using your hands until ingredients are well combined (but not mixed into a paste). Using your hands or a burger presser, form meat into 12, 1’’ patties.
  • Spray both sides with oil then grill for about 3 minutes on each side, or until patties are no longer pink in the center.
  • Serve healthy and flavorful burgers with tomatoes, lettuce, your favorite sauce, avocado, and pickles.
