Chicken Peach Pasta Salad

  • 2 large ripe white peaches peeled and cut into chunks
  • 2 cups cooked or rotisserie chicken chopped
  • 1/2 red onion thinly sliced
  • 1/2 cup prepared poppy seed salad dressing
  • 1/2 cup fresh basil finely chopped
  • 1 cup chopped walnuts toasted
  • 1/2 pound pasta cooked and cooled (we use DeLallo’s Orecchiette whole wheat pasta)


  • Cut 2 peaches into fourths, then each fourth into chunks; place in large bowl. Add chicken and onion. Toss with enough dressing to coat. Cover and chill 15 minutes to 2 hours.
  • Prepare pasta according to package directions; drain and cool.
  • Add walnuts and fresh basil to chicken mixture and toss to coat. Add the chicken mixture to cooked and cooled pasta; gently toss and serve! Add more dressing, if desired.
