Gooey Chocolate Cake

Adapted from The Taste of Oregon cookbook. I like that most of the ingredients can already be found in our kitchen cabinets!

Ingredients

  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 eggs
  • 2 cups flour
  • 2 cups sugar
  • 1 Tbsp baking soda
  • 1 teaspoon salt
  • 1/2 cup baking cocoa
  • 1 cup strong hot coffee
  • 2 cups  heavy cream
  • 1/2 cup cocoa
  • 1/4 cup powdered sugar
  • 1 tsp. vanilla

Instructions

  • Preheat oven to 350 degrees. Combine and mix well buttermilk, oil, and eggs. Set aside.
  • In a separate bowl, sift together flour, sugar, soda, salt. Add cocoa.
  • Combine liquid and dry ingredients, alternating with cup of coffee. Beat well.
  • Bake at 350 degrees in a greased and floured 9“ x 13” or 10“ x 14” pan for 35-40 minutes. Cool for 30-40 minutes.
  • Whip cream; when stiff, add the cocoa, powdered sugar, and vanilla. Frost the cake with the whipped cream and serve immediately.
