Fried Eggs in Pepper Rings Recipe

  • 2 large peppers
  • 10-12 eggs
  • 1/3 cup Parmesan cheese
  • Salt and pepper


  • Thinly slice 2 large bell peppers, cutting horizontally and removing any seeds.
  • Spray a frying pan or grilling pan with cooking spray (or lightly butter). Place the rings on a hot grill.
  • Flip each ring over and crack an egg in each center.
  • Fry the egg ring (over medium-low heat). Lightly salt and pepper. Sprinkle with Parmesan cheese.
  • You can cook on one side for about 5-8 minutes, or like I did, flip it over for a couple of minutes. The cheese will get crispy brown.
  • Serve with homemade potatoes and tofu (or regular) sausage.
