On a wooden skewer (6 inches long), place a Silver Dollar pancake. Then layer a basil leaf, mozzarella ball, bacon pieces, basil leaf, tomato, Canadian bacon (folded over), and another basil leaf. End with another pancake. (Optional to add 3 pancakes to the skewer.)
Arrange the skewers (10) on a round platter
Around half of the outside of the platter, arrange sliced Pancake Bread.
In the center, place fruit in season (this week cherries and blackberries).
