Trader Joe’s Caprese Mini Pancake Skewers are the perfect finger food for any brunch menu, made with Silver Dollar Pancakes!


Friends, how cute are these little pancake skewers? They are the perfect weekend breakfast, or addition to a brunch buffet. Super easy to put together, they’re made with “caprese” ingredients (cheese, tomato, basil) and delicious on any breakfast plate!

Caprese Mini Pancake Skewers

Most of you know my love for Trader Joe’s. As a hostess, it’s easy to plan ahead (like keeping these Silver Dollar Pancakes in the freezer). For this recipe, you do not serve these skewers with warm pancakes. I used leftover pancakes at room temp from this Epic Silver Dollar Pancake Board.

These are the perfect finger food for any weekend or brunch menu!

How to make Caprese Mini Pancake Skewers

On a wooden skewer, stack the mozzarella cheese, bacon, tomato, and Canadian bacon between two mini pancakes (with fresh basil leaves).

You’ve got yourself delicious breakfast kebabs! So fun!

Why I started blogging

I’m often asked how and why I keep blogging. Since I started my blog in 2006 (yes, the year that my friend, Ree, from The Pioneer Woman started her blog), I could give a lot of reasons for how it evolved over the years. But besides many great opportunities (and it is full time work creating and blogging about new recipes and travel), my number one focus has always been relationships.

Connecting and meeting new people all over the world, creating experiences, and inspiring people to hopefully do the same, has been my number one goal.

Hosting is creating. Cooking is creating. Inviting is creating (who should we invite, who should get to know who, who do we want to invest in).

Hosting pulls our authentic selves to the limelight. This can be hard for the introvert (you know, you have to invite, greet, make conversation).

But when we refuse to stretch ourselves to be authentic and “known,” I think in the long run it hurts us.

Because we all want to be loved and known.

Caprese Mini Pancake Skewers

Serve on a breakfast plate!

Ingredients
 

  • 10 slices Canadian bacon
  • 10 cherry tomatoes
  • 10 mozzarella cheese balls
  • Fresh basil leaves
  • 10 slices cooked bacon, cut in 1/3
  • 1 box Trader Joe’s Silver Dollar Pancakes
  • 2 loaves Trader Joe’s Pancake Bread
  • 10 skewers
  • Cherries
  • Blackberries

Instructions
 

  • On a wooden skewer (6 inches long), place a Silver Dollar pancake. Then layer a basil leaf, mozzarella ball, bacon pieces, basil leaf, tomato, Canadian bacon (folded over), and another basil leaf. End with another pancake. (Optional to add 3 pancakes to the skewer.)
  • Arrange the skewers (10) on a round platter
  • Around half of the outside of the platter, arrange sliced Pancake Bread.
  • In the center, place fruit in season (this week cherries and blackberries).
  • Serve for breakfast or brunch and enjoy!
