Serve a tasty Vegetarian Burrito Bowl Board with saucy beans, rice, pico de gallo, pickled red onion, crunchy cabbage, and creamy avocado. Serve on the 20-inch BIG BOARD.
Ingredients
½Stovetop Cuban Black Beans, or other protein, or plain black beans
4servings rice
¼red cabbage, finely shredded
1cpico de gallo salsa
1/2cuppickled red onions
2avocados, peeled, sliced, covered in lime juice to prevent browning
2radishes, finely sliced
¼pkgcotija cheese, crumbled
Cilantro to garnish
White corn tortilla chips
Instructions
Make ahead black beans and rice recipes. Keep warm until ready to serve.
On a big board, place bowls of red onions, salsa, rice, cheese, and beans.
Arrange on the board shredded red cabbage (or favorite lettuce or cabbage), chips, fresh cilantro, radish, and avocados.
Serve on the side your favorite guacamole, dressings, or any other toppings!
