Sweet Honeycrisp apple slices on crackers with creamy goat cheese, honey, and fresh rosemary make an easy apple cheese appetizer for easy entertaining.
Lay crackers on a platter or a board. Even distribute goat cheese on top of each cracker by spreading it with a knife.
Layer thinly sliced apple on top of the cheese. TIP: I use a mandolin to make them really thin.
Drizzle the cheese and apples with honey.
Lightly sprinkle the chopped nuts and finely chopped rosemary on top (they will stick to the honey).

Not a fan of goat cheese? Replace with cream cheese or feta cheese or a thin slice of Cheddar cheese (or Dubliner cheese).

USE PEARS: Replace the apples for thin pear slices.
Nuts: Use your favorite nuts, but we like them glazed or toasted.
Toast nuts in the microwave: Lay the nuts on a papertowel and place in the microwave for 1 minute. Move them around and toast for another minute, or until they are nice and toasty.The flavor is better with toasted nuts than regular nuts.
Storage: If you have leftover apple cheese appetizer bites, it’s best to store them in an airtight container in the refrigerator. Because apples can brown once sliced, place the bites in a single layer and cover tightly. They are best enjoyed within 24 hours for the freshest flavor and texture.
Leftovers: If you know you’ll have leftovers, store the sliced apples and toppings separately and assemble the bites just before serving. This keeps the apples crisp and prevents them from browning too quickly.
