2tsp.Mexican spice, or 1 tsp. cumin + 1 tsp. chili powder
17 ozgreen chilies, diced
115 ozBush’s black beans, drained
112 oz jarred enchilada sauce (I use Trader Joe’s)
16 ozwhole olives, drained
2cupsMexican cheese, shredded (plus more for sprinkling on top)
½cupcooked rice, optional
Instructions
Preheat oven to 350 degrees. In a medium pan, cook the ground beef until done (well browned). Drain off any fat. Mix in the butter, Mexican spice; salt and pepper to taste.
In a large bowl, combine the chilies, black beans, enchilada sauce, whole olives, and cheese with the meat. Stir together; pour the mixture into a 8×8 baking pan. (Optional to add rice)
Bake for 20 minutes, or until bubbly and hot. Serve with more cheese on top, with chips, vegetables, or as a meat mixture for tacos, enchiladas, burritos, or taco salad.
Optional to serve with sour cream, finely chopped green onions, and chopped tomatoes on top or on the side.
