Instructions
Lay out frozen pumpkin cookies onto a baking sheet. Portion out the ice cream onto the cookies according to how many cookies you have (10 cookies makes 5 sandwiches, 12 makes 6, etc).
Press the ice cream between the cookies, then wrap in wax paper (tie with twine, if available) and return to the freezer.
Allow them to freeze for at least an hour before serving.
