Makes about 48 balls
Store in tightly covered container in refrigerator.
They last 3-4 weeks in the fridge.
You can store them 2 months in the freezer (covered).
Set aside 1/4 cup cookie crumbs. Mix cream cheese and remaining cookie crumbs until blended.
Roll dough into 1-inch balls (about 48), placing on wax or parchment paper. Freeze for 15 minutes. (The truffles need to be frozen before dipping.)
To melt the chocolate, place the pieces in microwaveable bowl. Microwave on HIGH 2-1/2 minutes, or until chocolate is completely melted, stirring every 30 seconds.
Dip the balls in melted chocolate; place again on waxed paper-lined, rimmed baking sheet.
Sprinkle with reserved cookie crumbs.
Refrigerate for 1 hour, or until firm.
Decorate and devour! Or package them up and give them away!
