Fried Eggs in Pepper Rings Recipe

large peppers
10-12
eggs
1/3
cup
Parmesan cheese
Salt and pepper
Instructions
Thinly slice 2 large bell peppers, cutting horizontally and removing any seeds.
Spray a frying pan or grilling pan with cooking spray (or lightly butter). Place the rings on a hot grill.
Flip each ring over and crack an egg in each center.
Fry the egg ring (over medium-low heat). Lightly salt and pepper. Sprinkle with Parmesan cheese.
You can cook on one side for about 5-8 minutes, or like I did, flip it over for a couple of minutes. The cheese will get crispy brown.
Serve with homemade potatoes and tofu (or regular) sausage.
