Mozzarella Stuffed Chicken Breast recipe is an easy mozzarella chicken bake made with cheese and marina, served with a side of sweet onions.Serve with spaghetti squash or pasta, or over zucchini noodles, rice, or steamed vegetables, or a side salad.
Make an incision in each chicken breast large enough for the Mozzarella and basil to fit inside (do not cut great all the way through). Stuff each chicken breast with a slice of Mozzarella and a basil leaf and place on greased baking sheet. [If using the thick slices, cut in half and lay next to each other.]
Salt and pepper both sides; cover breasts with marinara sauce on each breast.
Bake at 400 until fully cooked, 30-35 minutes.
How to saute the onions:
For the onions, melt butter in pan on medium/low heat. Add onions and cook until golden brown, 10-15 minutes while the chicken is baking.
Add thyme, salt and pepper to taste.
Serve chicken and onions together with fresh chopped basil on top.
