Pear and Cranberry bites are an easy endive appetizer to bring to a party--gluten-free, low carb, drizzled with honey, and delicious!
Double or triple the recipe for a large group!
Ingredients

head Belgian endive
½
Bartlett pear
,
cored and diced (leave skin on)
3-4
Tbsp.
crumbled goat cheese
⅓
cup
dried cranberries
,
coarsely chopped
¼
cup
chopped toasted walnuts
Honey
,
for drizzling
Instructions
Cut the base off of the head of endive and separate the spears (or gently pull off). Place on a flat surface, board or plate.
Spread the goat cheese on the bottom of the endive. Sprinkle with pears, cranberries, and walnuts.
Drizzle with honey; serve!
