Toss the apple slices in the lemon juice and set aside. Use a vegetable peeler or cheese cutter to shave off a 2-3’’ piece of Parmesan cheese.
Lay half a sheet of prosciutto onto a work surface and place the Parmesan shaving in the center. Place an apple slice and a pinch of arugula at the base of the prosciutto to make an upside down “T” shape. Roll upwards until both are tightly wrapped. Repeat for the remaining prosciutto, Parmesan, apple, and arugula.
To serve, drizzle with balsamic reduction and enjoy!
