chopped parsley

chopped cilantro

lemon or lime juice

agave nectar or honey

olive oil

cooked quinoa

currants
1/2

chopped or sliced almonds

cup
julienned carrots
1/4
cup
chopped mint

cup
bell pepper

chopped

cup
chopped sugar snap peas

red onion

diced

cup
cucumber
,
diced
salt and pepper to taste
Instructions
For the dressing, combine lime, olive oil, honey, and a pint of salt and pepper. Mix together and set aside.
Next, in a large bowl, combine remaining ingredients. Pour over the dressing, then toss salad until everything is evenly coated in dressing.
Refrigerate and serve cold.
