Raspberry Lemon Cream Galettes
Easy last-minute dessert recipe for Mexican themed dinner, or Cinco de Mayo!
Ingredients
- 1 package galette cookies
- 1 cup heavy whipping cream
- 1/2 cup lemon or lime curd
- 1 cup fresh raspberries
Instructions
- In a small bowl, whip the heavy cream, using a hand mixer. Add in the curd and gently mix.
- On each cookie, spread the lemon mixture, topping it with 1 raspberry.
- Place cookies on a platter and serve!
