Easy last-minute dessert recipe for Mexican themed dinner, or Cinco de Mayo!
Ingredients
1
package galette cookies
1
cup
heavy whipping cream
1/2
cup
lemon or lime curd
1
cup
fresh raspberries
Instructions
In a small bowl, whip the heavy cream, using a hand mixer. Add in the curd and gently mix.
On each cookie, spread the lemon mixture, topping it with 1 raspberry.
Place cookies on a platter and serve!
