1green pepper, top sliced off 2 inches (for a bowl)
1Trader Joe’s Green Goddess Dip
8 ozpastrami or corned beef, rolled
4 ozItalian dry salami
16 oz boxTrader Joe’s Pita Bite Crackers
1English cucumber, thickly sliced
1small cauliflower, cut into pieces
14 ozMarin French Brie, we bought at Trader Joe’s
14 ozTrader Joe’s Irish Porter Cheddar Cheese
½heart celery, cut in pieces
8 ozwhite mushrooms
8 ozsugar snap peas
6 ozyogurt pretzels
5 ozmilk chocolate coins
1cuppistachios, shelled or unshelled
On a large prepared board, fill a bell pepper bowl (slice the top off 2-inches and set aside). Remove the ribs from the pepper and fill with Green Goddess dip; place in the center of the board. With the 2-inch top, cut 2 thin slices. Lay on the board next to the green pepper dip “bowl" and fill with pistachio nuts. On either side of the nuts, lay down the 2 cheeses.
In rows, from left to right, lay down the rolled pieces of pastrami (or corned beef), a row of crackers, milk chocolate coins, pretzels, cucumber, and cauliflower (which brings you to the center row of cheese and dip).
Next lay down another row of crackers, celery, mushrooms, snap peas, ending with the salami (folded in quarters). Add parsley for garnish.
