Today we’re serving up a St. Patrick’s Day Grazing Board! I’ve had so many of your ask me for ideas for what to serve for St. Patrick’s Day. So how about a green and white cheese board?

What is a grazing board?
A “grazing board” is simply a fancy name for a party platter. Marth Stewart made the “grazing board” a thing years ago, which is another name for a party platter or party tray! Basically it’s finger foods, or munchies you can eat with your hands.
What is a charcuterie board?
I love a charcuterie board. I mean what’s not to love? Cured meat, creamy cheeses, and delicious veggies and dip? Sign me up! And the good news is, this board is so easy to make. It may seem a little intimidating, but today I’m going to show you step by step how to create your own beautiful Irish board. You may even impress some of your friends.
Let’s get started!
Ingredients for this grazing board:
- Green pepper
- Trader Joe’s Green Goddess Dip
- Pastrami or corned beef + Italian dry salami
- Trader Joe’s Pita Bite Crackers
- English cucumber
- Marin French Brie (we bought at Trader Joe’s – OMG, have you tried this yet?)
- Trader Joe’s Irish Porter Cheddar Cheese
- Celery heart
- White mushrooms
- Sugar snap peas
- White yogurt pretzels
- Milk chocolate coins (wrapped in gold)
- Pistachios (in shells)
It’s important to know that there is no wrong way to make your charcuterie board. There is no limit to what kind of ingredients you choose. You do need a good board though!
And friends, a cutting board (or a flat board) just doesn’t cut it. I’ve been making boards for years now and know that if you don’t have a lip around the outside, it becomes a big mess. Have you seen this, too?

How to make a bell pepper bowl for dip
Take a green bell pepper and slice off the top (about 1-2 inches down).
Remove the seeds and the ribs; fill with dip and serve!
With the lid, thinly slice off 2 slices and fill with pistachio nuts! FUN & EASY!

- 1 green pepper, top sliced off 2 inches (for a bowl)
- 1 Trader Joe’s Green Goddess Dip
- 8 oz pastrami or corned beef, rolled
- 4 oz Italian dry salami
- 1 6 oz box Trader Joe’s Pita Bite Crackers
- 1 English cucumber, thickly sliced
- 1 small cauliflower, cut into pieces
- 1 4 oz Marin French Brie, we bought at Trader Joe’s
- 1 4 oz Trader Joe’s Irish Porter Cheddar Cheese
- ½ heart celery, cut in pieces
- 8 oz white mushrooms
- 8 oz sugar snap peas
- 6 oz yogurt pretzels
- 5 oz milk chocolate coins
- 1 cup pistachios, shelled or unshelled
- Parsley, garnish
- On a large prepared board, fill a bell pepper bowl (slice the top off 2-inches and set aside). Remove the ribs from the pepper and fill with Green Goddess dip; place in the center of the board. With the 2-inch top, cut 2 thin slices. Lay on the board next to the green pepper dip “bowl" and fill with pistachio nuts. On either side of the nuts, lay down the 2 cheeses.
- In rows, from left to right, lay down the rolled pieces of pastrami (or corned beef), a row of crackers, milk chocolate coins, pretzels, cucumber, and cauliflower (which brings you to the center row of cheese and dip).
- Next lay down another row of crackers, celery, mushrooms, snap peas, ending with the salami (folded in quarters). Add parsley for garnish.
- Serve and enjoy!
