Easy entertaining: Be prepared, by picking up a bag of peppers at Costco, along with goat cheese and pumpkin butter. You’re set for an easy appetizer!
Ingredients

dozen mini sweet peppers
,
red, orange, and yellow
4
oz
semi-soft goat cheese
,
cream cheese works, too.
Salt and fresh ground black pepper
1/3
cup
pumpkin butter

I buy at Trader Joe's
Fresh thyme
,
about 1 Tbsp. fresh, plus more for garnish
Instructions
Preheat oven to 350 degrees.
Prepare the peppers by slicing off the “top” (concave) side of the peppers, leaving the stem.
Scoop out the seeds and the membrane.
Combine the softened goat cheese with pumpkin butter and a dash of salt and pepper. Mix in fresh thyme (about 1 Tbsp. fresh).
Spoon the pumpkin goat cheese into the peppers.
Arrange the peppers on a baking sheet that has been sprayed with non-stick cooking spray.
Bake for around 15-18 minutes,until peppers are softened and cheese is hot and bubbly; Serve!
