Sweet, juicy watermelon topped with salty feta cheese, fresh basil, and a drizzle of olive oil. This 10-minute feta cheese appetizer is the perfect summer party bite!
Ingredients
¼cupfresh basil leaves
Olive oil to drizzle
1mediumWatermelon, sliced ½" thick in squares
18 ounceblock of feta cheese, sliced ¼" thick in squares
Remove the basil leaves from the stem and chop into thin strips.
Slice the watermelon and feta, placing the feta on top of the watermelon.
Sprinkle basil evenly on top of watermelon and feta.
Drizzle with olive oil.
Salt and pepper watermelon lightly.

Choose the right watermelon: Look for a watermelon that feels heavy for its size and has a yellow spot on the bottom where it sat on the ground. This indicates ripeness.
Use block feta: Pre-crumbled feta doesn't hold its shape as well. Buy a block of feta and slice it yourself for clean, neat squares.
Make ahead: You can prep the watermelon and feta up to a day in advance and store them separately in the refrigerator. Assemble just before serving.
Serve cold: For the best texture, serve these bites cold straight from the fridge. The watermelon is most refreshing when chilled.
Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days, but the watermelon may release liquid, so they're best enjoyed fresh.
