Why you’ll love this feta cheese appetizer
- This no-bake, no-cook recipe comes together in just 10 minutes.
- The refreshing watermelon and light flavors make this the ideal summer appetizer.
- They look beautiful on any party platter with minimal effort.
- You only need 5 basic ingredients to create this crowd-pleasing appetizer.
- Serve it as an appetizer, side dish, or even a light dessert.

Ingredients needed
- Fresh basil leaves: Adds a fresh, slightly peppery flavor that complements the sweet watermelon and salty feta perfectly.
- Olive oil: A good-quality extra virgin olive oil adds richness and helps tie all the flavors together. Use it for drizzling.
- Watermelon: Look for a ripe, sweet watermelon. Slice it into 1/2-inch-thick squares for easy serving.
- Feta cheese: A block of feta cheese provides the perfect salty, tangy contrast to the sweet watermelon. Slice it into ¼-inch thick squares.
- Salt and pepper: A light sprinkle enhances all the flavors and brings the dish together.
How do you make this watermelon appetizer?
Prepare the basil:
- Remove the fresh basil leaves from the stems.
- Stack the leaves on top of each other, roll them up tightly, and slice into thin strips (this technique is called chiffonade).
- Set the basil aside until ready to assemble.
PRO TIP: Cutting the basil into thin ribbons ensures the flavor is evenly distributed across each bite without overwhelming the other ingredients.

Slice the watermelon:
- Slice the watermelon into 1/2-inch thick rounds.
- Cut each round into square or rectangular pieces, about 2 inches across.
- Arrange the watermelon squares on a serving platter.
PRO TIP: Use a sharp knife and cut the watermelon into uniform squares for the most beautiful presentation. You can also use a cookie cutter to create fun shapes!
Slice the feta:
- Carefully slice the block of feta cheese into ¼-inch thick slices.
- Cut the slices into squares slightly smaller than the watermelon pieces.
- Place a feta square on top of each watermelon square.
PRO TIP: Feta can be crumbly, so use a sharp knife and slice gently. If the feta crumbles, just press it together gently when placing it on the watermelon.

Assemble the bites:
- Sprinkle the fresh basil ribbons evenly over all the watermelon and feta bites.
- Drizzle lightly with olive oil.
- Finish with a light sprinkle of salt and pepper.
PRO TIP: Add the salt and pepper just before serving to prevent the watermelon from releasing too much juice and becoming watery.
Serve:
- Arrange the watermelon feta bites on a beautiful serving platter.
- Serve immediately while the watermelon is cold and crisp.
- Garnish with extra basil leaves if desired.
PRO TIP: These bites are best served fresh and cold. You can prep the ingredients ahead of time but assemble just before serving for the best texture.

Sandy’s tips and substitutions:
- Choose the right watermelon: Look for a watermelon that feels heavy for its size and has a yellow spot on the bottom where it sat on the ground. This indicates ripeness.
- Use block feta: Pre-crumbled feta doesn’t hold its shape as well. Buy a block of feta and slice it yourself for clean, neat squares.
- Make ahead: You can prep the watermelon and feta up to a day in advance and store them separately in the refrigerator. Assemble just before serving.
- Serve cold: For the best texture, serve these bites cold straight from the fridge. The watermelon is most refreshing when chilled.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 2 days, but the watermelon may release liquid, so they’re best enjoyed fresh.

Variations:
- Add balsamic: Drizzle with a balsamic glaze instead of olive oil for a tangy, sweet contrast.
- Type of cheese: Try burrata or fresh mozzarella in place of feta for a milder, creamier bite.
- Herb variations: Swap fresh basil for fresh mint, cilantro, or parsley for different flavor profiles.
- Add a pop of color: Top with a small fresh berry like a blueberry or raspberry for extra color and sweetness.
- Make it spicy: Add a pinch of red pepper flakes or a drizzle of spicy honey for a sweet-heat combination.
- Add crunch: Sprinkle with toasted pine nuts, pistachios, or pumpkin seeds for added texture.
- Skewer style: Thread watermelon, feta, and basil onto small toothpicks or skewers for easy serving at parties.

I love that quote you shared by Shauna! So good! I had some leftover watermelon in the fridge, some feta from the farmers market and just bought a basil plant so I tried a piece of this today. Oh YUM! it might be my summer go to lunch..lol.
Last weekend I hosted a baby shower for my daughter and I was reminded again how much I love providing good food for friends. In the season of life we are in, we don’t get opportunities to have people over often and sometimes it’s just the two of us and even then, it all depends on when hubby gets home from work…so I don’t cook near as often as I used to. Time to get creative with simpler meals and rethink what “dinner” means.
Love the simplicity of this!
Boy oh boy does this sound delicious! I’m in love with the combination of salty cheese with sweet fruit. I just bought watermelon this week for Memorial Day and it’s so juicy. Can’t wait to try this one! Thanks, Sandy :)
Love asking questions at the dinner table too! And this watermelon appetizer is genius!! YUM
