Cut the cheese ahead, drain the olives, prepare the meat, and cut the fresh rosemary (if you need to). Divide all ingredients in half. Assemble board as pictured, placing each ingredient across from the same ingredient.
Start with meat, then cheese.Option to make flowers with the prosciutto. TIP BELOW.
Place rosemary springs, olives, and cherry tomatoes on last. Then repeat to make a whole wreath.
Notes
Sandy's tips and substitutions:
This is a simple board, so you don’t need any bowls. Cut everything the same bite size, so it looks uniform.
Aim for 2-3 types of cheeses (try soft, hard, and flavored cheeses) and 2-3 types of meats, several types of fresh or dried fruit, and a few crunchy items if you prefer.
ADD SALTY & SWEET: You can add a touch of chocolate, and crackers or cookies.
TIP: If you are using a square board and are struggling to keep the round shape, you can trace a circle on a piece of parchment paper and place that on top of your board to use as an outline.
Vegetarian. Think about adding another vegetable, if you prefer to not add salami, like cucumbers or peppers, some soft bread like mini naans, or even marinated vegetables like artichokes.
Add a dip. Add a balsamic drizzle, or add a dip in the center of the charcuterie wreath. You can make our easy Greek Yogurt Ranch Dip.
Make flowers with prosciutto:
It's easy to make prosciutto flowers. Start with folidng the prosciutto slices in half lengthwise, then roll them tightly, by pinching the bottom and keeping the top open to create a petal. For a more layered look, fold a slice back and forth to make a ribbon, then roll it up, adding extra, ruffly slices to the outside for the outer petals. TIP: Work with cold prosciutto, which makes it easier to handle and helps it hold its shape.
