Good Morning, Friends! I can’t believe it’s November! One word that sums up November for me is “awesomeness.”
Apricot Almond Appetizer
Enjoy these Apricot Bites drizzled with honey! My favorite Fall appetizer!
Here are the easy ingredients for this appetizer:
- Dried apricots
- Whole roasted almonds
- Goat cheese
- Honey
- Fresh thyme (rosemary works, too)
Bringing people together
It’s not your typical “gratitude” word, but it really sums up “life” for me—all things surrounding the beauty of nature, and the blessings of family and friends, plus a whole lot of extra blessings like health, a home, doing something meaningful in life (I love sharing with you on RE), being a mom and wife, and stepping outside of my comfort zone (yes, these are often blessings, because they stretch us and make us better people).
Entertaining as a way of bringing people together. I’m sort of a catalyst, one would say, of connection. [Another way to bring people together is to serve casual dishes, like The Big Board ideas!]
I like this role. It took me a few years after being married to realize that I was really good at it, and to relish and use these gifts. My husband learned to be a part of it, although at first he was more nervous than I was!
We love having people over, and seeing the magic that happens around the table!

Easy Apricot Almond Appetizer
Here’s an iPhone shot in my kitchen of these yummy Apricot Almond Appetizers ready for company! What I love about this recipe is you can make it a few hours earlier, easy to set out right before the guests arrive! I also think that sometimes we need an appetizer that is not so heavy … maybe just a bite to nosh on before the big meal!

Apricot Almond Appetizer
Ingredients
- 2 oz. goat cheese at room temperature
- 20 dried apricots, preferably from Trader Joe’s for the best flavor and tartness
- 20 almonds, salted is best
- 2 Tbsp. honey
- Fresh thyme, finely chopped
Instructions
- Place the apricots on a platter. Spread each apricot with goat cheese.
- Top each apricot with a whole almond.
- Drizzle the platter with honey.
- Sprinkle with fresh thyme, garnishing with thyme on the side. Serve.

Making these for a wedding shower next weekend! Just made one to try it out and LOVED IT!!!! Had to make a few more, just to be sure:) Easy, different and delicious! Sweet,salty,cheese and fruit all rolled into one!! ❤️
