Perfect for summer and Father’s Day weekend, friends … as our country is starting to open up!
If you’re not vegan, don’t worry, my meat-loving friends. All you have to do is replace the vegan meatballs with some charcuterie meat for a true charcuterie board! Remember that charcuterie means, the art of curing meat.
Here are all the elements you need for an EPIC vegan charcuterie board:
- Hope Roasted Cashew Garlic Almond Dip
- Picco de gallo
- Trader Joe’s marinated olive duo
- “Lightlife” plant based meatballs
- “BFree” pita breads
- 1 bunch organic radishes, tomatoes, celery, jicama, carrots, mini peppers, and cucumbers
- Favorite crackers
- Whole almonds
- Toothpicks (for meatballs)

I think about compliments, and those around us. Learning how to give a compliment is an art. It doesn’t just happen, but you have to actually set yourself aside, and think about the attributes of others, or beautiful things around you. A sincere compliment uplifts someone’s spirits.

But also, a whole new world can open up when you start genuinely seeing people differently, noting the positive features in others. Also when you start noticing the beauty of nature. Sharing words that build up (and don’t tear down), reminds me of the Balcony People book [affiliate link] I read years ago! It’s truly freeing to be able to give a compliment and mean it.
I’m always amazed by the people that I meet who do not know how to do this.
So back to the holiday weekend. This is what I love about a charcuterie board: At the end of the day, use whatcha want and eat it up!
How to make an epic appetizer board
- In the center of a large prepared board, lay down a large bowl of the cashew dip (or hummus).
- Place the meatballs in two small bowls (with toothpicks) and heat right before serving.
- Fill two other small bowls with pico de gallo and the marinated olives. Set on the board.
- Around the outside of the board, lay down the vegan pita halves, crackers, and carrots (leave the tops on).
- Around the center bowl, layer cucumber slices.
- Fill in any open areas with more crackers and almonds. Serve!
There are no hard rules for boards, and they are really customizable!

Ingredients
- Hope Roasted Cashew Garlic Almond Dip
- Picco de gallo
- Trader Joe’s marinated olive duo
- 2 8 oz pkgs “Lightlife” plant-based meatballs
- 2 pkgs “BFree” pita breads, cut in half
- 1 bunch organic radishes
- 2 bunches organic tomatoes
- 2 stalks celery, sliced
- Jimaca sticks
- 2 bunches small carrots, with tops left on
- 20 mini colored bell peppers
- 2 large cucumber slices
- Favorite crackers
- Whole almonds
- Toothpicks, for meatballs
Instructions
- In the center of a large prepared board, lay down a large bowl of the cashew dip (or hummus).

Definitely trying this out. But will be adding Houmous (Hummus / hommus) dip.
