One-Pot Creamy Sausage Pasta

Amy’s a fabulous cook (she blogs over at BellyFull.net) and every recipe in this book looks so good, and so easy for weeknight cooking!

The best part about homemade food is it’s way healthier, and you can make extra if you wish, for leftovers the next day. You can plan ahead (shop with a list to avoid buying things you don’t need). Or, have you ever just taken the cookbook with you to the store? I have!

Planning meals will help you avoid ingredients that will end up in the back of your pantry!

I have a basket of pasta that is in the front of my pantry, so when a recipe calls for pasta, I can take quick inventory before I head to the store. We use DeLallo pasta (100% whole wheat), and it is the best!

One-Pot Sausage Spaghettini Dinner

Gather these ingredients:

  • Extra virgin olive oil
  • Sweet Italian sausage link: I used Smoked Beef Sausage
  • Onion + garlic
  • Salt and pepper
  • Chicken stock: you can also use veggie or beef
  • Thin spaghetti, broken in half: we buy DeLallo 100% Whole Wheat
  • Baby spinach
  • Heavy whipping cream
  • Parmesan: optional

How do you make One-Pot Creamy Sausage Pasta

  1. In a large sauce pan, heat the olive oil over medium heat. Add sausages and cook, turning occasionally, until they are browned. Transfer the cooked sausages to a plate and pour off all but 1 TBSP of the oil from the pan.
  2. Return the pan to the heat and add the onion, and cook until softened, about 3 minutes. Then add the garlic and cook. Season with salt and pepper. Pour in the broth and water, and turn up the heat to bring it to a boil.
  3. Stir in the pasta and simmer until tender.
  4. While the pasta is cooking, slice the sausages in half lengthwise and then into half moon pieces. Add it back to the pan and cook for another couple minutes with the pasta.
  5. Stir in the spinach and cook until wilted. Then stir in the cream and heat through.
  6. Serve immediately, topped with shredded Parmesan.

What to do with leftovers?

Let’s talk leftovers for a minute here. Many times I’ll double a recipe, because we love leftovers. If you do make extra, make sure it’s something that will hold up well for a few days, like a soup, stew or bean dish. Otherwise it may be wasted.

For this season of life, leftovers in our kitchen never go to waste. But for some reason, if you have leftovers, think about sharing with neighbors, or donating extra non-perishables to your local food bank (many grocery stores serve as drop-off locations).

Another idea for avoiding waste is to repurpose a dish.

How to repurpose this dish into a Sausage Spaghettini PIE:

1. Spray a pie plate with cooking spray, pre-heat oven to 350 degrees.
2. In a large bowl, add the leftovers, with 1 cup of your favorite cheese, and 1/2 cup cream.
3. Gently mix together; pour into the prepared pie plate.
4. Sprinkle with 1 cup of cheese (try a different flavor?) and fresh chopped parsley.
5. Bake for 20 minutes until heated through. Serve!

The reality is that food waste is an issue where we live, and forty percent of food in the U.S. is wasted. OUCH. That is embarrassing and bad.

I think about my grandparents and how they farmed for a living, and how this waste disrespects the hard work farmers put into producing our food. And then on top of that, it disregards the people who don’t have enough to eat.

Friends, we need to be diligent about preventing food from going to waste. Our family included.
