Friends, everyone loves a Fourth of July party! With all the big parties that we’ve hosted in the past, my style now is to start the day off entertaining a bit earlier, or to enjoy a delicious meal with my family.
Brunch is where it’s at! It’s easy, you can plan ahead, it’s cool out, and then it leaves the rest of the day to enjoy outdoor activities, or head to another late-afternoon party!
There’s no decadence in what I’m sharing today, only pure deliciousness.
Overnight Breakfast Burritos
Just in time for an easy brunch is a dish that you can make the night before. It’s our family favorite, Overnight Breakfast Burritos, made with sautéed veggies and a can of BUSH’S Cocina Latina Frijoles Negros Machachados, (with the flavors of poblano chiles, tomatoes, and a touch of bacon smashed into black beans), tortillas, eggs, and cheese.
Make the night before, and bake in the morning!
The menu
Serve with this Blueberry Salted Caramel French Toast Casserole, Watermelon Blackberry Lime Salad, and Raspberry Yogurt Cake. Bam!
It’s really that simple!
And of course, the toppings are everything.
4 ingredients to a successful brunch:
1. The people. Spending time with people you love on the holidays is always the best. It will be a bit quieter for us in our new home this year, but our kids will be with us, and we’re going to “go with the flow.” As in, you never know when you’ll get an invite from a neighbor, or friends visiting the area!
2. The food. I plan to make a scrumptious brunch, as we may have friends stop by. Even last-minute out-of-towners! This Overnight Breakfast Burritos dish will be a HIT at the party!
3. A good drink. You have 2 options here, serve plain (pulp – yes!) orange juice, or make mimosas!
4. Quick and easy. I love how you make this recipe the night before. Easy for the hostess, you pop in the oven, set the table, get the toppings ready, and greet your guests on the deck or back patio!

Overnight Breakfast Burritos
Ingredients
- 2 Tbsp. olive oil
- 2 bell peppers, red and yellow, diced
- 1 large sweet onion, chopped
- 1 can BUSH’S Cocina Latina Frijoles Negros Machachados
- 3 cups shredded Sharp cheddar cheese, divided
- 10 8 inch whole wheat tortillas
- 6 eggs
- 2 cups milk
- 1 Tbsp. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. pepper
Instructions
- Lightly spray a 9×13 inch glass baking dish with nonstick cooking spray. Set aside.
- In a large frying pan, heat the olive oil and sauté the peppers and onion.
- Lay a tortilla flat on a plate. Spread 1/8 cup of the beans on the tortillas. Scoop about ⅓ cup of the vegetable mixture on top of the beans; sprinkle with cheese. Roll up tightly and place the burritos seam side down in the baking dish. Repeat with the rest of the tortillas.
- In a separate bowl, whisk together the eggs, milk, flour, salt, and pepper. Pour the egg mixture over the tortillas; sprinkle with remaining cheese. Cover the dish with foil and refrigerate overnight.
- In the morning, preheat the oven to 350 degrees. Bake (with foil on), for 40 minutes. Remove the foil; bake for 20 minutes more, until the cheese is melted, and the eggs are set. The burritos will be golden on top.
- Garnish with chopped tomatoes, avocados, cilantro, or salsa.

Do you think this could be made with corn tortillas with the same success??
Jean, you can try the corn, but sitting overnight, I think they’ll get soggy. If you make it up, pour the eggs over (and not refrigerate overnight), it will work for sure! :)
I would be more than happy to wake up to this deliciousness! I haven’t tried this version of Bush’s beans BUT they sound awesome!
I haven’t tried those Bush’s black beans yet but I love that this dish can be prepped the night before! I am always looking for great brunch recipes and need to try this soon.
This is such a great idea for brunch. Beans are so great for breakfast, they really fill the tummy. This would be a great recipe for a family reunion to make a fun breakfast with no fuss.
I am in love with this dish, how the eggs are poured over the tortilla wraps. Making this!!
