    Sandy’s tips and substitutions:

    • Make ahead: Optional to prepare the carrots ahead of time: Make according to the recipe and store in an airtight container in the fridge, until you’re ready to reheat.
    • Reheat the carrots: Arrange them up on a parchment-lined baking sheet and bake them in the oven at 250 F for 10-15 minutes. Then, follow the plating instructions above, serve, and enjoy!
    • Carrots: If you can find carrots with their greens still attached, they’re often sweeter and more vibrant in flavor. Look for fresh, firm, small or medium-sized carrots.
    • Slice if needed: If the carrots are too big, you can cut them in half lengthwise.
    • Roast on High: For the perfect caramelization, roast the carrots at 400°F to get a golden, crispy exterior. Time will vary depending on the size of your carrots, so check with a knife or a fork until tender.
    • Feta: We buy a high-quality “block feta” for the smoothest whipped texture (don’t buy the crumbled).
    • Honey: Drizzle with a little honey or even hot if you want a “kick” after roasting. The sweetness pairs deliciously with the whipped feta!

Garnish with chopped fresh thyme, a drizzle of olive oil, and sprinkle of the crushed pistachio. You can even add a another drizzle of honey. Serve and enjoy!
