Roasted Carrots with Whipped Feta
Roasted carrots with whipped feta is a simple carrot side dish with sweet, tender carrots served atop a spread of tangy feta dip. The caramelized carrots with the feta create a flavor combination that’s unforgettable and so good!

Since I host many dinner parties, I’m always looking for a good side dish! For any season, this Roasted Carrots with Whipped Feta is my new favorite, as it’s so satisfying and pairs well with with lamb, roast, chicken, or ham. Basically for any holiday meal – serve these caramelized carrots with this feta spread and you’ll have your guests talking!
The best Roasted Carrots with Whipped Feta
If you haven’t tried whipped feta before, you can also use this recipe for a dip for veggies and crackers. It also pairs well with warm pita bread, crostini, or as part of a charcuterie board.
For serving, you spread the whipped feta cheese on a large platter, and top with the amazing, sweet roasted carrots. Toppings can be honey, hot honey, nuts –make it your own. Grab our easy recipe below!

Start with these ingredients
- Carrots: Roasted until tender and slightly caramelized (sugary) and savory flavor, with oil, honey, and spices.
- Whipped feta: Whipped to a creamy spread by blending feta cheese with Greek yogurt, olive oil, garlic, and lemon. It is smooth and tangy!
- Garnishes: Fresh lemon, olive oil, fresh thyme and pistachios.
- Variations: Mix up the herbs, spices, or nuts to the roasted carrots or whipped feta.

How do you roast carrots?
Add the carrots to a large bowl, with the olive oil, honey, and all of the seasonings: cumin, paprika, cinnamon, sea salt, and black pepper. Use your hands to toss and coat the carrots with the seasoning blend.

- Roast the carrots for 20-25 minutes, until they are tender. At the halfway point, remove carrots from the oven and toss (roll around) once more to ensure that they cook evenly.
- Remove from the oven and allow to cool.

How do you whip the feta?
Add the feta cheese, greek yogurt, lemon juice, olive oil, and garlic to a food processor and process until the feta reaches a smooth and creamy texture. If too thick, add in a few tablespoons of water and re-process until the feta reaches desired consistency.

Once the whipped feta is smooth, spread it across a large plate. Top the feta dip with the carrots (I like to lay them down in a row).

Sandy’s tips and substitutions:
- Make ahead: Optional to prepare the carrots ahead of time: Make according to the recipe and store in an airtight container in the fridge, until you’re ready to reheat.
- Reheat the carrots: Arrange them up on a parchment-lined baking sheet and bake them in the oven at 250 F for 10-15 minutes. Then, follow the plating instructions above, serve, and enjoy!
- Carrots: If you can find carrots with their greens still attached, they’re often sweeter and more vibrant in flavor. Look for fresh, firm, small or medium-sized carrots.
- Slice if needed: If the carrots are too big, you can cut them in half lengthwise.
- Roast on High: For the perfect caramelization, roast the carrots at 400°F to get a golden, crispy exterior. Time will vary depending on the size of your carrots, so check with a knife or a fork until tender.
- Feta: We buy a high-quality “block feta” for the smoothest whipped texture (don’t buy the crumbled).
- Honey: Drizzle with a little honey or even hot if you want a “kick” after roasting. The sweetness pairs deliciously with the whipped feta!

Serving
Once the whipped feta is done, spread it across a plate. Once the carrots are done, remove them from the oven and allow to cool for about 5 minutes, then lay them down on top of the whipped feta.
Garnish with chopped fresh thyme, a drizzle of olive oil, and sprinkle of the crushed pistachio. You can even add a another drizzle of honey. Serve and enjoy!
