Well, today I’m sharing a simple last-minute dessert, Toasted Pound Cake and Strawberries, that you can make in no time.
Ingredients for Pound Cake and Strawberries
- Pound cake loaf, store bought is fine to use
- Butter
- Strawberries
- Mascarpone cheese
- Coconut sugar, or brown sugar
- Coconut
- Vanilla ice cream, optional

Toasted Pound Cake and Strawberries
Now for the last minute dessert. If you run out of time with your cooking, fast and furious, you can put a delicious dessert together for your company!
This toasted pound cake is perfect for brunch or dessert. Buttery pound cake fried in butter and topped with mascarpone and fresh berries. YUM! If you don’t have coconut sugar, use brown sugar.
The shopping list is easy–buy store-bought pound cake.
Right before serving, put butter in your fry pan. Slice the pound cake and fry. Then add all the toppings!
How to serve Toasted Pound Cake with Strawberries
Easy! You can serve the slices on The Big Board or a platter!
And don’t forget a dab of mascarpone on top, with brown sugar or coconut sugar!
One room in your house
Let’s say that you have one room you are so embarrassed about. I say don’t let it (perfectionism) stop you!
It can be a lot of work to entertain, to pull everything together as the host, and many times I’ve just shut my bedroom door. I haven’t actually put a sign on the door, but why not?

So I guess, in a sense, I’m giving you all permission today to just shut a door (or several), and toss in what you need to clean up! It’s all good.
Oh, and if someone peeks in the room? Not a big deal.
It’s easy to hide our stuff and imperfections from the world. To shut the door. To think that no one will know. But really, what are we trying to hide? That we’re real? That we have bad, disorganized days like everyone else? That our lives are hectic and we don’t always get our “to-do” list done?
It’s okay to not be afraid if someone sees our mess!
Years ago I would have been devastated, so mad at myself, but I’ve since learned the balance of what really matters in life. True friendships or false ones. Things of substance, like friendships and love, or ideas of image and perfection that only steal our joy.
I’m off the hook now. I can move forward even in imperfect times, and still open my home to others. Even with a messy room!

Toasted Pound Cake and Strawberries
Ingredients
- 1 14 oz. pound cake loaf, store bought ok, cut into 1 inch thick slices (you should get about 8 slices)
- ¼ cup butter
- 1 lb. strawberries, sliced
- 8 oz. mascarpone cheese
- ¼ cup coconut sugar, or brown sugar
- ½ cup coconut
- Vanilla ice cream, optional
Instructions
- Melt the butter in a large flying pan. For about 2 minutes, fry each slice on medium heat, until toasted and brown.
- On each slice of pound cake, spread mascarpone cheese, sprinkled with coconut sugar, and top with fresh berries. Optional to add a small scoop of vanilla ice cream!

I close the bedroom door too. Luckily, I have a two story home and I don’t generally allow people upstairs unless they need to use the bathroom.
