Being Grateful and Generous with Apple Walnut Cake
This Apple Walnut Cake is delicious (no oil or butter), packed with apples for a juicy, moist cake to share with others!
Being grateful and generous shouldn’t just come during the fall season, although they’re emphasized more during the harvest, when we give thanks for the bounty that nature has brought forth for our sustenance and enjoyment.
It’s also a season to reach out to family and friends.
I like to think of it as opening our homes–with yummy smells, warm fires, cozy blankets, good drinks, delicious food—to share, open our hearts, and be thankful for the generosity of others.
Golden Delicious Apples.
Every year (as I mentioned here), we get boxes of apples from our dear friends. They are so generous to share their harvest with us! I, in turn, cook up a storm, and also share the apples with my neighbors and friends.
There is nothing better than pulling a warm pie or cake from the oven, knowing exactly where the apples came from!

With my recipe today, I’m not only thankful for delicious, beautiful, green Golden Delicious apples, but I’m thankful for the generosity of so many friends and family in our lives.
It’s important to pass this love on to others. We cannot just sit back in our cozy homes and hoard what we’ve been given. It’s time to give back, share, reach out, and celebrate the harvest.
Reaching Out.
It looks different to each person. Some may be giving to people they do not know, others might be getting the courage to actually make an invite, others may be gathering all of their family together. I’ve learned not to judge what “reaching out” means to others.
We’re all living in different situations.
In some way, somehow, we have to take our eyes off of ourselves and put them onto others.
And this is the perfect time and season to start!

Instructions
- Combine first 5 ingredients in a large bowl. Mix together egg, apples, and 1/4 cup nuts; add to the flour mixture. Spread in a greased 8×8-inch baking pan.
- Bake at 350 degrees for 25-30 minutes. Sprinkle brown sugar and remaining walnuts on top; serve.

I made this for dessert tonight. Easy to assemble – very tasty!
I made this as an easy lactose-free dessert for Sunday dinner. The only change I made was to put the walnuts and brown sugar on top before baking, and it was delicious. Thank you for a wonderful, simple, and delicious recipe!
