Friends, we are so loving it over here in Bend. It’s been snowing, and then there have been beautiful days, like yesterday!
Yesterday we ventured out to Smith Rock State Park to hike to the top!
Smith Rock State Park
It’s amazing the difference between the north and south ends of the Bend area. The south, where we are staying, has much more snow than the north.
You can see from the photos the little snow here at Smith Rock.
To make our time adventurous (there were a few times I was scared to death, climbing such steep paths, with ice mixed in), we decided to have dinner up on top of the rocks! But before, we enjoyed one of these organic drinks (fueling up!)
How exciting is this? Very!
My husband, being the great outdoors guy that he is, is always prepared.
Camping Chicken Noodle Soup
He surprised me with a dinner (so sweet) of Chicken Noodle Soup (read on, for what made it so special), and hot cocoa! Yes, I’d say it was a little bit romantic sitting so high up, enjoying this fabulous God-inspired view!
We spread out on an area of snow that was flat, and he started the water boiling in the REI Jet Boil.
Then, the secret ingredients.
Noodles in a cup – or your favorite Ramen Chicken Noodle soup mix. (Use a premier brand, it’s much better.)
Prosciutto and Parmesan cheese were added to the top of a noodle soup package.
Pour the boiling water to the top; let sit for 3 minutes, and ENJOY!
That we did.
We ended by not only sitting and taking in this majestic view, but with 2 cups of hot cocoa.
Paul brought milk in a thermos, so we boiled it, added it to a premier chocolate mix, and drank every drop!
Break out of your routine
Life moves pretty quickly these days. We’ve taken these last 2 weeks to spend it in a different place than home, while we still worked each day, but also set aside time to do something in the outdoors.
It’s good to look at our lives with fresh eyes. To break out of our routines, eat healthy, get good sleep, and to reconnect with all the things that are truly important to us.
Next time you’re in the great outdoors, and you have your jet boil with you, maybe surprise your hiking partner with this great recipe!
If you could slow life down a bit, what would be the first thing you’d do in the outdoors?
