This recipe is great for 2 people, because you have leftovers! Or, serve it for the family for Sunday dinner!
All you need is 10 minutes to get this dish in the slow cooker. You’ll have a hearty chicken and veggie dinner waiting for you when you get home.
If you don’t have chutney, you can replace it with 1 cup of chicken broth, or 1/2 cup of wine and 1/2 cup of balsamic vinegar.
Even salsa works!
You don’t add any water, and you walk away for 6-8 hours. The chicken is so tender! I love making a huge pot, because then it’s good in leftover enchiladas, etc.

Slow Cooker Chicken Breasts with Carrots and Potatoes
Ingredients
- 1 whole red onion, sliced
- Cooking spray
- 2 cups carrots, sliced
- 6 or 1 lb. small round red potatoes, cut into 1/2-inch slices
- 1 tablespoon chopped fresh thyme
- 3/4 teaspoon salt, divided
- 1/2 teaspoon freshly ground black pepper, divided
- 2-3 large boneless, skinless chicken breasts, cut in half
- 1 8 oz. jar tomato or mango chutney, (or favorite chutney)
Instructions
- Spray slow cooker with cooking spray; place the carrots, potatoes and onion on the bottom.
- Sprinkle the veggies with salt and pepper. Rub the chicken breasts with the thyme and paprika.
- Arrange chicken on top of vegetables; season with salt and pepper.
- Pour the jar of chutney (or liquid) over the chicken.
- Cover and cook on LOW for 4-5 hours, until chicken is done and vegetables are tender.

Just thought I would let you know that I tried this in the instant pot tonight. I put the onions, carrots and potatoes with some salt and the thyme into the pot for 6 minutes. This was a bit too long. (Will cut that back to 4 or 5 when I do it again). Cut chicken breasts in half and sprinkled with paprika, salt and pepper. Did a QR on the instant pot and put in the chicken and chutney. Cooked another 6 minutes with a 10 min NPR. Other than the veggies being a bit over cooked it turned out really well.

Yum! Sounds great! I too hate “diets” especially ones that tell me what I can or can’t have. I’d rather make lifestyle changes that will last. Making small changes here and there. Much more successful.
