Several things we did, that just fell in to place for us, was we worked on getting back into a healthier lifestyle, and this is where cooking slow cooker chicken comes in!

I’ll share a few things today that made a differene to me. I am not a big “diet” person, so I’d rather make changes (inspiration, rather than desparation) on my own–healthy but not drastic. Besides, I do horrible when I’m told what to eat and when, because then all I think about is food. How can that be healthy?

A few things, right off the bat, is that we brought juice with us and added this in to our diet for 5 days. We had so much energy, we felt great, and it was a very good kick-start to healthy eating, and to get rid of cravings.

Yoga and healthy eating

The other thing we did was start yoga – daily! So now, we’re on Day 14 of doing yoga at home. There is nothing quite like stretching and strengthening your body! Even though I’ve done yoga for several years, it’s new for my hubby (and has been fun to do together).

Lastly, besides eating lots of veggies, fruits, and protein–cutting out the sugar and carbs–we did NOT bring a scale with us. How freeing was that? Very freeing! It meant I was not obsessed with a number, but more focusing on the outcome of how I felt, exercise, and taking care of my body (both physically and spiritually).

Resetting your diet, or getting on track, is something most people have to do, unless you’re really disciplined 24/7, 365 days a year. Which–we do not know many people who truly are (and honestly, the ones we do know, do not seem to enjoy life very much).

Here’s what healthy eating means to me:

MODERATION. Portion control is so important. And eating slowly, actually chewing your food. Stopping at one serving. Drinking water in between meals.

EAT REAL FOODS. All the fruits, vegetables and protein you’d expect, but also including healthy fats.

ENJOY SNACKS. We love different combos of nuts (almonds or walnuts), mixed with cranberries, for a little sweetness.

CHEATING. You have to have days when you cheat, where nothing is totally off-limits (unless it’s easy for you to always say no). Otherwise the “forbidden” food can gain some power or control over your life. That is not good, so there must be some freedom!

ENJOYING THE FLAVORS. Savor the flavors of roasted vegetables, raw foods, juice, fruits, and proteins. Well-balanced makes us feel so good!

SHARE A MEAL. My husband and I are back on track with sharing meals when we eat out. Feels so much better!

I’ll take healthy living any healthy foods anyway, that give us sustenance and pleasure.

And more energy for the outdoors! (PS. we snowshoed almost every day – glorious!)

All you need is 10 minutes to get this dish in the slow cooker. You’ll have a hearty chicken and veggie dinner waiting for you when you get home.

If you don’t have chutney, you can replace it with 1 cup of chicken broth, or 1/2 cup of wine and 1/2 cup of balsamic vinegar.

You don’t add any water, and you walk away for 6-8 hours. The chicken is so tender! I love making a huge pot, because then it’s good in leftover enchiladas, etc. WATCH THE VIDEO!

Slow Cooker Chicken Breasts with Carrots and Potatoes

If you don't have chutney, you can replace it with 1 cup of chicken broth, or 1/2 cup of wine and 1/2 cup of balsamic vinegar.

Servings: 4 -6

Ingredients

  • 1 whole red onion sliced
  • Cooking spray
  • 2 cups carrots sliced
  • 6 small round red potatoes about 1 pound, cut into 1/2-inch slices
  • 1 tablespoon chopped fresh thyme
  • 3/4 teaspoon salt divided
  • 1/2 teaspoon freshly ground black pepper divided
  • 2-3 large boneless chicken breasts cut in half
  • 1 8 oz. jar tomato or mango chutney

Instructions

  • Spray slow cooker with cooking spray; place the carrots, potatoes and onion on the bottom.
  • Sprinkle the veggies with salt and pepper. Rub the chicken breasts with the thyme and paprika.
  • Arrange chicken on top of vegetables; season with salt and pepper.
  • Pour the jar of chutney (or liquid) over the chicken.
  • Cover and cook on LOW for 6-7 hours, until chicken is done and vegetables are tender.

  2. Yum! Sounds great! I too hate “diets” especially ones that tell me what I can or can’t have. I’d rather make lifestyle changes that will last. Making small changes here and there. Much more successful.
