Cauliflower White Cheddar Cheese Soup
A healthier version of potato soup, enjoy Cauliflower White Cheddar Cheese Soup, pureed to a creamy style soup or served as a chunkier-style!
Friends, what I love about this soup is that it’s made with white cheddar cheese. I sooo love the flavor, and I hope you will as well.
Cauliflower White Cheddar Cheese Soup
I’m sort of obsessed with cauliflower lately, I do not know why! Here are a few of my other favorite cauliflower recipes: Moroccan Lentil Cauliflower Soup, Turmeric Roasted Cauliflower, Mashed Sweet Potato Cauliflower recipe.
Ingredients for Cauliflower Soup
- Butter
- Sweet white onion
- Head of cauliflower
- Chicken broth, or vegetable for Vegetarian
- Sharp white cheddar (I use Tillamook)
- Coarse salt and ground pepper
- Cayenne pepper
- Cilantro
Make a pot, and serve it to a few friends for lunch! That is what I did recently!
It’s a potato version, only served with cauliflower!

Cauliflower Cheese Soup
Enjoy this soup recipe, and remember when you are pureeing soup (if it’s slightly hot), do not put the lid on top of the blender. I usually lay a paper towel on top, and this method works perfectly!
You can do a quick puree for chunky-style, or you can puree it longer for a creamy-style soup!

Cauliflower White Cheddar Cheese Soup
Ingredients
- 3 Tbsp. butter
- 1 large sweet onion, diced
- 1 medium head cauliflower, trimmed and cut into 1 1/2-inch pieces
- 4 cups chicken broth, or vegetable for Vegetarian, plus more if desired
- 5 1/2 ounces sharp white cheddar, grated (1 1/2 cups) (I use Tillamook)
- Coarse salt and ground pepper
- 1/8 tsp. cayenne pepper
- Cilantro, chopped (optional)
Instructions
- In a large pot over medium heat, melt the butter. Add onion and cook, stirring occasionally, until softened, 8 minutes. Add cauliflower and cook until just beginning to brown, for 12 minutes.
- Add broth and 1 cup water; bring to a boil over high. Reduce heat and simmer until cauliflower is very tender, 20 minutes. Allow to slightly cool.
- In several batches, fill a blender (I use a VitaMix) halfway with mixture and puree until smooth (use caution when blending hot liquids).
- Return pureed soup to the original pot, and add more broth or water if you want a thinner consistency.
- Heat over medium until warmed through; add cheese and stir until melted. Season with salt and pepper. Serve sprinkled with cayenne.
- Garnish with cilantro (optional), and serve!
This was and AMAZING recipe!!!!!!!!! Cooked it as is and it tasted like a healthy version of potato soup! PERFECTION!
