Easy Press Strawberry Pie
June is the perfect month to start making strawberry pies, or slab pies, and it rolls right into late summer, with Oregon berries. YUM.
This recipe starts off with a pie crust that you do not have to roll out. Which is why it’s called “easy press.” Next you add the berries, and drizzle a sweet glaze over the berries, and let the pie set up in the fridge until ready to serve!

Let’s get started on the simple ingredients:
- Oil
- Milk
- Flour
- Sugar
- Salt
How do you make an easy press crust?
In a medium bowl, whisk oil and milk together with a fork. Mix in the dry ingredients: flour, sugar, and salt. Mix with a fork until it forms a ball and is well mixed.
Press the dough into a pie pan, pushing it evenly into the corners and up to the rim. With your fingers, pinch the crust with your left hand from the inside out, and push in the middle with your righthand index finger, to make a fluted look. Do this around the entire rim of the pie crust.
Put a few pokes in the bottom of the crust with a fork. Bake the crust and then remove from the oven and cool.
Ingredients for Strawberry Pie:
The pie filling and the whipped cream are super easy. Gather these ingredients:
- Sugar
- Cornstarch
- Strawberry gelatin
- Fresh strawberries
- Little sprig of basil for garnish
- Heavy whipping cream
- Powdered sugar
- Vanilla
Simple steps to making a fresh strawberry pie:
In a medium saucepan, stir together sugar, water, and cornstarch. Cook on high, stirring constantly, until thick and clear. Allow to slightly cool.
Stir in strawberry gelatin until dissolves. Let glaze cool. Slice strawberries into piecrust. Pour cooled glaze over berries. Refrigerate and serve the same day.
How do you serve a fresh strawberry pie?
Serve with fresh whipped cream!
You can either spread the whipped cream on top or serve it separate in a bowl.
You can also serve this pie with homemade vanilla ice cream, or store-bought vanilla or strawberry ice cream.
Tips and Substitutions:
- Use any fresh berries in place of the strawberries.
- Even if you mix up or swap out the berries, you can still use the strawberry gelatin. Or, you can use any flavor of berry gelatin.
- Double the recipe for a large bar pan (15×10) and cut into squares for serving.
- Serve the same day that you make the pie, to avoid the crust from becoming soggy.
- Add an orange “kick” to the whipped cream, with a splash of Grand Marnier.
What is hospitality?
The word “hospitality” seems to be a scary word for many. In our busyness, we are fearful of commitment, of something taking us away from “our” time. Or we think hospitality only means hosting a huge party, or bringing a potluck dish to a gathering. But the blessing of hospitality can be as simple as taking a piece of leftover pie to your neighbor. It can be making sandwiches for the homeless once a week or working in a soup kitchen. It’s this kind of hospitality that doesn’t have anything to do with whether you have a home or the state of your home.
It has nothing to do with gourmet food or the perfect timing of a gift. It sometimes starts with a spark–thinking about someone else first–and then acting on the idea by following through with a blessing. Perhaps it comes down to this simple truth: Hospitality isn’t about you. It’s about making others feel warm and welcome, a friendliness, a caring attitude. There are so many ways of showing love, so let’s start off with a summer pie!

Ingredients

- 2 Tbsp. cornstarch
- 3 Tbsp. dry strawberry gelatin
- 2 pints fresh strawberries, sliced

- 2 cups heavy whipping cream
- ¼ cup powdered sugar
- 1 tsp. vanilla
Instructions
- Preheat oven to 375 degrees.
- In a medium bowl, whisk oil and milk together with a fork. Mix in the dry ingredients: flour, sugar, and salt. Mix with a fork until it forms a ball and is well mixed.
- Press the dough into a pie pan, pushing it evenly into the corners and up to the rim. - Whipped Cream: Beat the cream until it forms peaks. Add in the powdered sugar and vanilla. Beat for another 20-30 seconds until blended. Serve on top of the pie!
