Make-ahead Strawberry Trifle 

For those who are starting to entertain again, I’d love to hear what you’re doing for Memorial Day coming up? Hosting a little shin-dig? Or maybe just family is coming? This dessert is so easy because you make it, keep in the fridge, and pull out of fridge right before serving. Easy! 

I love how you can mix up the berries, too!

But first, here are the easy ingredients for Strawberry Trifle:

  • Heavy whipping cream
  • Powdered sugar
  • Vanilla
  • Creme fraiche
  • Lemon curd
  • Strawberries + blueberries + raspberries
  • Pound Cake

Just in time for summer holidays, a cold dessert of sponge cake (or angel cake or pound cake) and fruit, covered with layers of custard, jelly (optional), and cream. Sometimes even alcohol is added for the holidays, the way my husband’s mother Betty made it.

What is in a trifle? Traditionally, the layers of a trifle include cake pieces, custard, fruit pieces, jelly and cream.

What is the best way to layer a trifle?

In a large glass bowl or parfait dish, add a layer of pound cake followed by the whipped cream mixture, strawberries, more whipped cream, cake, whipped cream, and blueberries and raspberries.

Elk in Sunriver

My hubs and I have been going down to the marina in the evening to spy on the elk. When it’s chilly out, they are always there–like 50-100 of them! When it’s warmer out, we notice the herd doesn’t come out into the field.

Ingredients
 

  • 2 ½ cup heavy whipping cream
  • c powdered sugar
  • 2 tsp vanilla
  • 8 oz creme fraiche
  • cup lemon curd
  • 12 oz fresh Strawberries, quartered
  • 6 oz fresh blueberries
  • 4-6 oz raspberries
  • 1 ½ lb pound cake, cut into about 3/4’’-1’’ cubes

Instructions
 

  • In a medium bowl, whip the heavy cream and vanilla. When medium peaks start to form, add the powdered sugar, creme fraiche, and lemon curd. Beat just until stiff peaks form; chill until ready to use.
  • Depending on the size and shape of your dish, you’ll want to divide your pound cake, berries, and whipped cream in half or into thirds.
  • In a large glass bowl or parfait dish, add a layer of pound cake, followed by the whipped cream mixture, strawberries, more whipped cream, cake, whipped cream, and blueberries and raspberries.
  • Serve chilled and enjoy!
