Beautiful Crater Lake and Greek Yogurt Waffles with Blue Diamond Almonds
These Greek Yogurt Waffles with Blue Diamond Almonds are a perfect breakfast or snack while in the great outdoors!
A balanced life has rhythm. And for summertime, this rhythm for my husband and me includes camping in our Westfalia camper van! Our culture encourages us to run, run, run … to move faster, keep up, go, don’t stop (and constantly be checking our phones).
Camping for us is relaxing, restful, rejuvenating, and refreshing. I love those 4 words! Taking the time to tune in to our own pace, agenda, and rhythm includes slowing down.
Beautiful Crater Lake.
This past weekend, we spent 4 days with our dear friends, camping on the Williamson River in Oregon, hiking and summiting to the Mt. Scott’s lookout tower, which overlooks beautiful Crater Lake.
Up on the lookout tower you’ll see Mt. Shasta, Mt. McLaughlin, Mt. Thielsen’s spire, and off to the distance is Three Sisters.
The wildflowers were gorgeous—red paintbrush, purple penstemon, and western pasque flowers.
The skies were a little overcast, but the lake was bluer than ever!
Someone up there had a good sense of humor! (Hello, Mr. Snowman!)
Why we hike.
Here’s what we’ve learned about hiking with good friends: A good conversation can’t be hurried.
We walk, and talk.
Walk, and talk.
We keep a good pace, but there is no race.
When we got up to the tower, we each found our space to sit and enjoy our lunch.
Bring a good lunch and snack.
I brought along our favorite Blue Diamond Almonds (+ another favorite flavor, BOLD Sriracha).
Here are some fabulous flavors for hiking and camping.
I like to bring and share them with our friends, because most times they’ve never tried the fantastic flavors!
Back to the conversation. As we walk and talk, our words meander their way to insight, revelation, even encouragement.
No rushing.
Just enjoying.
Greek Yogurt Waffles.
Our hike was long and hot, but we started if off with a delicious waffle recipe that I brought from home. Since we knew we’d have full hookups, I brought my waffle baker! How fun is that!?
The secret to camping is being prepared with the menu, so all we had to do was plug in the baker, make the waffles, and serve!
Set the table.
And, I always like to set a festive table! Mix and match the dishes, no one seems to care!
Of course we also served them with delicious flavors, such as Chocolate, Blueberry, and our family-favorite, Toasted Coconut.
We love adding Greek Yogurt to our waffles, because it gives it a nice texture and sort of a sourdough flavor.
Another camping breakfast.
The next morning we enjoyed Greek yogurt with berries and more flavored almonds! Such an easy camping breakfast! Another family favorite is the Toasted Coconut.
And, what is camping without a good Scrabble game? And a healthy, sweet snack (love the Oven Roasted Dark Chocolate almonds).
MORE almond flavors.
For outdoor activities and camping SNACKS:
Oven Roasted Blueberry or Sea Salt
If you ever come to Oregon, make sure and come up the east side of Crater Lake to enjoy the Mt. Scott Lookout Tower, and take in the breathtaking sweep of Crater Lake!
What is it that you love about camping or hiking, that makes you want to slow down?

I just love the aspect of being unplugged for awhile…the beauty of nature, the slower pace with no agenda.
