Just in time for summer, we love to set out a delicious Pineapple Cheese Board! So easy for last-minute guests stopping by, or even a late night dinner. A few bites to nosh on is all that we need, right? Especially during the summer months, sometimes a cheese board is all you need for dinner or a snack. You can add more cured meats and make it a lovely charcuterie board, too, and better yet … serve on our big boards (all sizes).
Pineapple Cheese Board
Adding fresh or dried aprictors and large chunks of pineapple with your favorite cheeses (I love a soft goat cheese)–summer in my soul!

Having just returned from Maui, we are in love with fresh pineapple. Of course we brought some back with us, and it pairs well on a charcuterie board.
- Serve as a snack or dinner on any board or tray.
- Easy to prepare for last minute company.
- Mix up the meats and cheese with your favorite, and for a more Hawaiian flare, add macadamia nuts.

- Brie cheese
- Boursin Gournay Cheese
- Trader Joe’s Chicken Sausage (or buy Aidells Smoked Chicken Sausage Links Pineapple & Bacon)
- Pistachio nuts
- Pecans
- Fresh cherries
- Fresh pineapple
- Dried apricots
- Crackers, Lesley Stowe
How do you make a summer cheese board?
- On a large board or platter, arrange the food.
- You can cook the sausage, or you can serve it cold (if you buy pre-cooked).
- Garnish with a fresh rosemary sprig.
- Serve and enjoy!
Tips and substitutions:
Don’t stress over a cheese board. If you’re like me, you have several cheeses on hand, dried nuts, and fruit. Add in fresh fruit and crackers. Go with the flow, check out what you have in your pantry!
For this board I was out of salami and cured meats, so I used a delicious chicken sausage from Trader Joe’s (pre-cooked). This was a fun surprise to add to the board! I slightly warmed up the sausage and cut into small bites. So it’s optional to use salami or cured meat.
Optional to buy Aidells Smoked Chicken Sausage Links (Pineapple & Bacon), which you can buy at Costco. This is really delish!
Summer Pineapple Cheese Board
I feel what we are missing is cozy hosting. Preparing a few bites (doesn’t have to be elaborate) and inviting people in. This kind of hosting (a simple cheese board) has become a new pattern of entertaining in my home. You can serve this board with grilled pineapple, pineapple chicken skewers, and an amazing upside down pineapple cake.
Once you have this board prepared, you sit down with a glass of wine and enjoy—no more work to be done! You can really focus on the people around your table.

Is the sausage served warm?Â
I barely heated it up before adding to the board. The sausage I bought was precooked, so it could be served either way. Warm is best!
