Slow Cooker Banana Walnut Oatmeal Breakfast
After a fun-filled weekend with our son home from college, and after getting to bed late every night, on Sunday, when the house was so quiet, I pulled out my slow cooker.
Within about 3 minutes I had one of our family-favorite breakfasts cooking.
I’m sure there are many varieties with different fruits and nuts, but this seems to be our family favorite.
Slow Cooker Banana Walnut Oatmeal
(serves 8-10)6 cups soy milk or skim milk
4 cups old fashioned oats
4 bananas, sliced
3/4 cup chopped walnuts
6 Tbs. brown sugar (I used Agave)
2 tsp. cinnamon
1/2 tsp. salt
Vanilla yogurt (optional)
In medium sized slow cooker, combine milk, oats, bananas, walnuts, sugar (or Agave), cinnamon and salt.
Cook on LOW for 1-2 hours, or MEDIUM-HI for 1 hour. Stir occasionally, or until desired consistency.
You can serve it with yogurt, and you can also serve it with fresh berries on top.
Amazing breakfast for a family with teenagers. In fact, when my son had 4 of his teen friends spend the night a few weeks ago, I got a pot of this going in the slow cooker so it was ready to eat when they woke up.
Fast and easy. Healthy and filling.

Just made this today and it was a huge hit! I halved it for my three boys and I and it was gone in minutes. I’ll definitely be making the full batch next time and saving some for my husband. Thanks for the terrific recipe. It will be made over and over again.
Made this for company this morning and it was a hit. I made it exactly as is. It made 5 large portions. Super easy! Start it a couple of hours before your guests wake up.

I love anything with vegetables, so first I saute some green peppers and onions in olive oil. I get a big (32 ounce) bag of frozen hash browns, and put a third of them on the bottom of the slow cooker. Add a third of the onions/green peppers, add about a a third of a pound of cooked cubed ham, and a half cup of cheese (I use Cheddar). Repeat the layers twice more.
In another bowl, mix 12 eggs, a cup of milk, and some salt and pepper (if you like that). Pour it over the ingredients and cook on low. I cook it overnight, so about 8 hours, but I think newer crockpots can cook it faster and it is about six hours. I originally got this recipe from busy cooks, if you want more info!
