~Takes only a few minutes to prepare.

~Put the chicken in the oven 2 hours before your company comes. The aroma will fill your home, making it smell so yummy.

~When it’s time to serve your guests, pull the chicken from the oven, place on a beautiful platter, and serve family style.

~It doesn’t have to look perfect to taste good. The juicier, the better! And yummy if you serve the onion sauce over mashed potatoes or your favorite rice.

How to cook a whole chicken

1. Wash and pat dry the chicken (remove the giblets, etc:). Place in a large baking dish with lid.

2. Rub herbs, spices, and shallots under the skin of the chicken (see photo above).

3. Pour liquid over the chicken (wine and balsamic vinegar); cover and bake for one hour.

4. Remove lid and bake for more time, following directions below.

All I care about, really, is the people around my table. Things don’t have to be fancy or impressive.

Roasted Balsamic Whole Chicken Recipe + RICE

I’ve been serving this recipe for 20+ years.

It only takes about 10 minutes to prepare, and then you pop it in the oven and walk away. (WATCH THE VIDEO!)

You do need to remove the lid after 1 hour of baking, but then .. be prepared for your house to start smelling really good.

Love the smell of fresh thyme and balsamic and wine.

Roasted Balsamic Whole Chicken Recipe

If you don’t want to use wine, you can substitute reduced-sodium chicken broth. Makes 4 adult servings, or 6 smaller servings.

  • 1 6 pound roasting chicken
  • 3-4 tablespoons fresh thyme, finely chopped
  • 2-3 shallots, minced (or leeks)
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 medium red onions, chopped
  • 1/2 cup dry red wine
  • 1/2 cup balsamic vinegar


  • Preheat oven to 350 degrees.
  • Wash and pat chicken dry. Remove the giblets, etc.
  • In a small bowl, combine the thyme, shallots, salt and pepper; rub under skin of chicken.
  • Place the onions in a roasting pan (with a lid); top with chicken, herb side up.
  • Pour the wine and balsamic vinegar over chicken.
  • Place the lid back on the dish. Bake covered for 1 hour.
  • Remove the lid and bake another 1 hour, or until a meat thermometer reads 180°. The chicken will be nice and brown!
  • Let stand for 15 minutes before carving. Pour onion sauce into a small bowl; skim fat. Serve with the chicken and rice or poatoes!
