When I think of refreshments, growing up it was always “cookies.” But realistically refreshments are something like food or drink, or a snack or light meal and drinks.

A few weeks ago I served refreshments at a table after a concert, and there was a large spread almost entirely of cookies!

Honestly, I have never seen so many sweets!

Some people bring homemade, some store-bought. Happily, there were also a few platters of fruit! Yes, glorious fruit! (Which, by the way, went very quickly. Many people want a more healthy snack, especially in the evening.)

So when bringing my plate of cookies, I added in fresh fruit. :)

That concert was a fundraiser for my daughter’s violin group she plays in, Siskiyou Violins, which by the way, they are playing in Carnegie Hall this week in NYC! So exciting … here’s a little clip of one of the “fun” songs they’ll be playing on stage.

Recipe: Double Chocolate Chunk Cookies {ReluctantEntertainer.com}

Summary: Rich, soft cookies that firm up as they cool down. Delicious!

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 ounces good-quality milk chocolate, 4 ounces coarsely chopped, 4 ounces cut into 1/4-inch chunks
  • 1 stick (8 tablespoons) unsalted butter
  • 1 1/2 cups sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Nuts (optional)

Instructions

  1. Preheat oven to 325 degrees. Whisk together flour, cocoa powder, baking soda, and salt in a medium bowl; set aside. Melt coarsely-chopped chocolate with the butter in a small heatproof bowl set over a pan of simmering water, or in a microwave on 50% power.
  2. Transfer chocolate mixture to a mixing bowl. Add sugar, eggs, and vanilla; mix on medium speed until combined. Reduce speed to low; gradually mix in flour mixture. Fold in chocolate chunks.
  3. Scoop batter, placing the scoops 2 inches apart on parchment-lined baking sheets. Bake for about 15 minutes. Transfer to wire racks. Let cool 5 minutes.
