How to Make a Superfood Salad Mix
I’m beginning to love kale, Napa cabbage, and Brussels sprouts more and more!
My daughter and I shop Costco together. We try to stick to the outside aisles and buy only the necessary things. :) Sometimes we get distracted, but mostly we’re in and out of the store quickly.
We tried a brand new salad mix that we really liked, but when we went back, they were out of stock. So, my lovely Abigail said, “Mom, why don’t we make our own superfood salad mix?”
Brilliant girl. And more cost effective. AND … she did the chopping and got us organized for the week to enjoy healthy salads! :)
What greens did we use?
-Kale
-Brussels sprouts
-Napa cabbage
What is the mixture to a superfood salad?
Our version is:
-Kale
-Napa cabbage
-Brussels sprouts
-Grated carrots
-Red onion
-Bluberries
-Seeds or nuts
-Edamame soybeans, shelled
-Grape tomatoes
-Blueberries
The secret to healthy salads is to be prepared. Buy the right ingredients, chop up ahead of time what you can (what will stay fresh, i.e. onions, peppers, etc.) Things like tomatoes, cucumbers, avocados … you don’t want to pre-chop those.
How to make your own superfood salad mix:
1. Chop up kale, Napa cabbage, and Brussels sprouts.
2. Mix together in a large bowl.
3. Place the greens in Ziploc bags. Squeeze the air out and seal.
4. For large quantities, mark the bags with a date. The mix lasts up to a week in your fridge!
Having the bag of greens ready to go makes salad making EASY!
In our household, were all trying to reach for salads FIRST, for lunch or dinner.

I usually buy a bag of “Superfood” salad. It has all the ingredients above + cranberries and poppy seed dressing. It is fantastic! Making your own is a good idea too, but does involve meal planning so your prepared salads dont go bad!

I love the idea of making your own salad mix–I bet it is so much cheaper!
I make salads fresh each time, but keeping the greens fresh is always a problem. Always experimenting with different ingredients, and found the combo of cabbage & romaine is super tasty! This is a great idea and I love the addition of brussel sprouts! Definitely doing this, thanks for the fresh tip, Sandy~

Sandy I wanted to share my Mom’s tip for storing lettuce and greens that I have been using for years and years. Place a paper towl in with your bag of greens. The paper towel absorbs any moisture, keeping your greens fresher longer! It really works. I use it with celery and chives too! Have a great day! Lisa
I bought that same kale superfood salad mix from Costco literally today! Love it! Such a nice change from boring romaine. I have two little kids so the bagged mix is handy; if they ever run out, though, I’ll make my own like you!

I make my own. I have never acquired an appreciation of store salad mix. It has a flavor or aftertaste that is off-putting to me. But it just may be my own taste buds. I like this combo and will give it a twirly whirl. :-D

I usually cheat and buy a bag or container at the store. I like your idea though and thought making this up would be a great addition to the spring mix I typically buy.

I used to buy salad in a bag but I found it didn’t say fresh very long and it was usually super expensive. Now I do like you and make up my own. I pre-wash everything and get it as dry as possible in a salad spinner (one of my best purchases) and bag it up. I find that putting a paper towel in the bag helps to keep everything dry. BTW I’ve never thought to use Brussels sprouts raw in a salad. Thanks for the tip!
