Being Too Busy and Curried Sweet Potato & Quinoa Soup
Do you ever feel you are drowning in so much to do? I know so many women who do, and I most certainly do, but I constantly give myself pep talks, trying to stick with 3 major things that need to be accomplished per day, and then go with the flow with the others. One thing I hate not accomplishing, is coming up with a healthy dinner for my family, like today’s recipe, Curried Sweet Potato and Quinoa Soup.
The other thing that’s important for me is exercise and reading something spiritual in the morning. I do not like the feeling of being overwhelmed, or treading water, so I try to start my day off on the solid ground called PEACE of mind. Oh, and always a large glass of water, first thing, and then eventually a cup or two (small) of espresso!
Another thing that helps me (now that I’m in my 50’s – midlife, right?) is to try to focus my attention on one thing at a time. Busyness and not focusing are time wasters! I hate that feeling.
You can simplify your life by practicing doing one thing at a time.
I’ve always had this approach, one thing at a time, though that’s not to say I don’t fall off and get a bunch of things whirling around in my mind. It does take discipline to plan, organize, and not lose control of the day. I’m not talking about losing control of life, but I talking about losing control of a busy schedule (big difference).
I’ve learned you can be busy, but still have PEACE!

Curried Sweet Potato & Quinoa Soup Recipe
Yield: 6 servings
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes
- Olive oil spray
- 1 sweet onion, chopped
- 3 cups quinoa, cooked
- 4-5 cloves garlic, minced
- 1 teaspoon sea salt
- 2 tablespoons curry powder
- 1 tablespoon ground cumin
- 6 cups vegetable (or chicken) broth
- 3 sweet potatoes, peeled and diced
- 1 large orange
- Creme Fraiche
- Spray a large saucepan with olive oil spray and add the chopped onion. Cook for 8 minutes, until tender.
- Add the garlic, sea salt, curry powder, and cumin. Cook for 4 to 5 minutes, stirring often.
- Add in vegetable or chicken broth and sweet potatoes and bring to a simmer. Reduce to low and cover; cook for 30 minutes.
- Remove from heat and allow to cool for 5 minutes.
- Zest an orange and set aside. Cute the orange in half and juice it, pouring into the soup mixture.
- Puree in batches using a blender or Vitamix (do not put the lid on top; use a cloth instead).
- Add salt and pepper to taste, orange zest, and the 3 cups of cooked quinoa. Mix and heat through.
- Serve with a dollop of Creme Fraiche. Add fresh herbs (optional).
