This is not your usual mama’s veggie platter. My mom’s generation would make the standard vegetable plate with carrots, olives, celery, and maybe Ranch dressing. Today’s platter is much more beautiful, fresh, with many flavors, and maybe 1 dip (and a little meat).

Crudités definition

Crudités are raw vegetables which can be cut into small pieces, sticks, or thinly sliced. They are usually served with some sort of dip. I love serving a fresh platter for company, because not ony is it healthy, there’s something for everyone!

But let’s get it straight: How exactly do you pronounce this word, “crudités?”

Like this: “krew/dee/tay”

Since my living room was spotless (for a moment), with a newly inspired happy space, I decided to invite a few friends over for dinner a few weeks ago, and whipped up a beautiful Crudités Platter, with some pita chips and baguettes on the side.

Crudites can sometimes be rather boring, with carrots, celery, olives and dip, so it only takes a tiny bit of creativity to make the platter sparkle with liveliness and color!

The perfect appetizer, and also delicious to make for springtime entertaining! ENJOY!

Tips to a Crudités Platter

1. Use what is in season, and look for vibrant, rich colors!

2. Mix in meat and cheese. Serve baguette or pita chips on the side (optional).

3. Include at least 4 types of vegetables (pickled is always good, too!)

4. Include a dip.

5. If a green vegetable, such as asparagus or snap peas, or string beans, blanch the veggies first to bring out the color.

6. Separate heads of small crisp lettuces, such as endive or radicchio.

7. Cut the vegetables within 2 hours of party time to keep them fresh!

Blanch the green vegetables in boiling water for about 1 minute; shock in ice bath to stop cooking and set a vibrant color. Leave some veggies whole, slice some in half (peppers, snap peas, radishes).

On a large tray (I bought at World Market), place a bowl of dip off to the side. Layer leaves of radicchio around the platter. Start filling in the spaces with each vegetable. BUY your own charcuterie boards today!

Wrap the mozzarella sticks with a hard meat, such as salami or prosciutto.

  • Radicchio
  • Radishes
  • Cherry or grape tomatoes
  • Carrots, skinny, baby, leave stems on
  • Pickled green beans, found in the pickle section of grocery store
  • Mozzarella sticks
  • Salami or prosciutto
  • Cocktail cucumbers, or English, thinly sliced
  • Mini peppers, slice some in half
  • Snap peas, slice some in half
  • Favorite dip, spinach, artichoke, hummus, salsa

Instructions
 

  • On a large tray, place a bowl of dip off to the side. Layer leaves of radicchio around the platter. Start filling in the spaces with each vegetable.
  • Wrap the mozzarella sticks with a hard meat, such as salami or prosciutto.
