Friends, don’t you love walking into a kitchen and falling in love with the smell? As if being with your family and friends isn’t enough, there’s just something about the smell of bacon, beef braising in red wine, leeks and onions, simmering curries, ginger cookies or fresh-ground coffee, or mulled apple cider or cinnamon rolls – to name a few.

I also love the smell of bread, mostly banana bread. I think it’s because it brings back so many wonderful memories as a child. My mom was a master-banana-bread-maker! And I have a few favorite banana recipes on my blog, too. {Follow links at the bottom of this post.}

Sunday afternoon, after we said goodbye to our middle son, who headed back up to Eugene to college (just a couple more months and he will be finished with this chapter in life), my husband and I sat in the living room with a cup of tea, and the smell of this bread baking in the oven. If you follow me on snap chat {SandyCoughlin}, I occasionally add snaps of my kids playing music (guitar, violin, piano), or what’s cooking in my kitchen– a little window into our world.

Dreaming …

After another long weekend of getting ready and holding a giant yard sale, we were exhausted. But it feels so good, folks, to be cleaning, thinning, purging, and staying on top of things around our property. There’s a lot of yard work to be done here, always a home improvement, and sometimes we work so hard, we forget to sit and relax. We come up short when it comes to talking about our future, our goals, our dreams. So we are trying to carve out more time.

We never want to stop dreaming, even though it is scary at times, to think about things that can drastically change your life. We never want to be afraid. Afraid of a new path, or directions that God may lead us in.

Dreaming makes you feel refreshed and new. It gives you a sense of hope, beauty, and excitement.

So we sit and talk for hours. Sundays are the best for this, Banana Cranberry Coconut Bread.

I love to make up a double batch of banana bread, which can sometimes be 6-8 small loaves.

This time I added coconut and dried cranberries.

And then the timer goes off.

Butter and knife.

And we move on to a sense of belonging, nostalgia, comfort, and what we have always known. Back to reality.

A fresh piece of warm bread.

I do believe what we dream about in this life is bottled up in heaven. And because of this, I never want to stop dreaming.

Banana Cranberry Coconut Bread

This Banana Cranberry Coconut Bread is good for breakfast, a snack, or served as a dessert with Vanilla ice cream.

Ingredients
 

  • 2 cups flour
  • 1 cup sugar
  • 2 tsp. ground cinnamon
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 cup vegetable oil
  • 2 cups mashed ripe bananas
  • 1 tsp. vanilla extract
  • 1/2 cup cranberries
  • 1/2 cup flaked coconut
  • 3 eggs, beaten

Instructions
 

  • Preheat the oven to 350 degrees. Grease two 8-inch loaf pans (or 4 small pans).
  • In a large bowl, stir together the flour, sugar, cinnamon, baking soda, and salt. Add the oil, bananas, cranberries, coconut and eggs. Mix well. Pour into prepared pans.
  • Bake for 1 hour (or less if small pans). Allow the loaves to cool for 10 minutes before turning onto a rack. ENJOY!
