4-Ingredient Fruit Salad Platter and a Pineapple Boat
Easter’s coming, friends! One of the things I recently did for a small gathering was make a 4-Ingredient Fruit Salad in a pineapple boat. My friend, Ree, The Pioneer Woman, has a similar recipe using melon on her site.
When I think of Easter, which I love, I always think of fruit bowls or boats, whether made from a watermelon or pineapple, because that is how my Mama did it.
I do miss Easters with Mom’s pretty table set with her china, white linen, and her traditional coconut layered cake, dusted with coconut and jelly beans. She made it year after year, and I’m glad she did, because when I see an Easter cake now, it makes me think of Mom.
Back to the traditional fruit salad for Easter–this time I kept it simple, scooped out the pineapple, added 3 other seasonal fruits, and Wah-Lah – such a pretty Easter-y presentation and a nice, fresh salad.
For a larger group, I liked the idea of using one half (one boat), and then adding fruit around the boat on a large platter! Very pretty display.
I say pooh-pooh to the rich salads with whipped cream and jello, and YES! to 4-Ingredient Fruit Salad in a pineapple boat! It’s all natural sugar!

4-Ingredient Fruit Salad Platter and a Pineapple Boat
Ingredients
- 1 whole pineapple, cut in half lengthwise
- 2 pints raspberries
- 2 pints blueberries
- 2 pints strawberries
Instructions
- Cut the pineapple in half, cutting out sections and scooping out the pineapple to make a boat.
- From one half, take the fruit and cut into small pieces. Add 1 pint of blueberries and raspberries to the pineapple; mix and put back into the boat.
- It’s optional to add strawberry slices to the mixture, or you can leave the strawberries whole and serve on the side.
- Display the remaining fruit on a large platter with the pineapple boat and serve!

I tried one like that in a dinner party and my friends loved it too much, I used strawberry,banana, mango and pineapple, and I used the peels of mango as cups too, it was great presentation,everybody made good comments about it
