Friends, what I love about this soup is that it’s made with white cheddar cheese. I sooo love the flavor, and I hope you will as well.

When we are open to gratitude and hospitality, we see clearly and perfectly how much good there is in our lives. Gratitude helps affirm this, and with hospitality, you can’t help but feel this.

We will always be faced with challenges in our lives, such as hard times, busyness, possibly sickness. Life provides the ebb and the flow, or what I call “seasons,” no matter how much we try to resist it. There is no limit to what we don’t have, or the perfect time, or being short of money, or bringing the right people into our lives, but we cannot focus on what we lack, or the hurts that possibly haunt us. We will inevitably be filled with dissatisfaction and excuses.

When we can look at our lives–what we’ve been given, our friends, our work, our family situations–and focus on what is right, we experience gratitude.

Mix gratitude and hospitality together and we truly cultivate beautiful memories in our own hearts, and in the hearts of others. The expression of love and and the attitude of “what’s mine is yours”–those are what make people feel welcome. Mix in a delicious meal, which can be as simple as a bowl of soup, and good conversation, and a gift is given right there. Here are a few examples of gratitude and hospitality. We just do what we are able, what we can manage. And we are blessed.

Enjoy this soup recipe, and remember when you are pureeing soup (if it’s slightly hot), do not put the lid on top of the blender. I usually lay a paper towel on top, and this method works perfectly!

You can do a quick puree for chunky-style, or you can puree it longer for a creamy-style soup!

Cook Time: 40 minutes

Total Time: 1 hour

This Cauliflower White Cheddar Cheese Soup can be pureed to an either creamy or chunkier-style soup!


  • 3 Tbsp. butter
  • 1 large sweet onion, diced
  • 1 medium head cauliflower, trimmed and cut into 1 1/2-inch pieces
  • 4 cups chicken broth (or vegetable for Vegetarian), plus more if desired
  • 5 1/2 ounces sharp white cheddar, grated (1 1/2 cups) (I use Tillamook)
  • Coarse salt and ground pepper
  • 1/8 tsp. cayenne pepper
  • Cilantro, chopped (optional)


  1. In a large pot over medium heat, melt the butter. Add onion and cook, stirring occasionally, until softened, 8 minutes. Add cauliflower and cook until just beginning to brown, for 12 minutes.
  2. Add broth and 1 cup water; bring to a boil over high. Reduce heat and simmer until cauliflower is very tender, 20 minutes. Allow to slightly cool.
  3. In several batches, fill a blender (I use a VitaMix) halfway with mixture and puree until smooth (use caution when blending hot liquids).
  4. Return pureed soup to the original pot, and add more broth or water if you want a thinner consistency.
  5. Heat over medium until warmed through; add cheese and stir until melted. Season with salt and pepper. Serve sprinkled with cayenne.
  6. Garnish with cilantro (optional), and serve!
