Doing Life: Easy Fresh Peach Cobbler!
When I wrote this post (about chores and garden work) we knew that we’d be having a dinner party the next night and my whole family had to pitch in to help. What I didn’t plan on was the weather being so blazing hot that we ended up moving the party inside to stay cooler. Even though I’d prefer to be outside on a beautiful summer evening, sometimes you have to make changes to keep your guests’ comfort in mind.
One of my friends had recently been through a very painful time (death in the family). I knew that being together on this night was going to be very important for our family.
Entertaining is not about me. It’s about us. Our family. Their family. Connection and togetherness.
We live in a period in history which has become both tantalizing and tormenting. We desperately want connection with each other, but also deeply fear it. The proliferation of pain from broken homes, failed marriages, abusive experiences, and profound loneliness creates both desire for, and deep anxiety about, intimacy.
On the other hand, we long for strong connection with each other. Togetherness matters a lot to us, and while we may conceal our needs as we grow older, we cannot deny them. They form part of our God-designed emotional DNA. -David Timm
Easy Fresh Peach Cobbler
2 c. fresh peaches
3/4 c. sugar
1 stick butter
1 c. flour
1 c. sugar
1 tsp. baking powder
1 c. milk
Combine 2 cups peaches and 3/4 cup sugar. Let stand 20 minutes.
Melt 1 stick butter in 1 1/2 quart baking dish in 350 degree oven.
Sift together flour, 1 cup sugar and 1 teaspoon baking powder. Add 1 cup milk and stir briskly. Lumps will remain.
Pour into baking dish of melted butter; top with peaches.
Bake 45 minutes at 350 degrees.
(I doubled the recipe and cooked for about 20+ minutes longer.)
After dinner we did move out to the back patio for dessert.
I’m thankful for friends that we can “do life” with. Struggles and joys bring us together. When the night did not cool down, we moved over to the pool’s edge and dipped our feet into the cool waters for a long time …
It was soothing.
It was refreshing.
It was a reminder to me of how friendships – both new and old – just feel good.

I love this post…. the idea that (especially during the summer) our plans may not go as we would like them initially. But, that what’s important is getting together with our family and friends. Opening our homes with a little preparation and planning. And being open to all that may come our way. Love this. The cobbler looks amazing!

I’ve been looking for an easy peach coobler recipe and this one looks so yummy and easy to make. I do not bake however because of the pictures I believe I can do this correctly! :)
I love this recipe. It’s just perfect for a quick dessert to carry to someone who is hurting, or just for the family in the busy, summer months. I have been covered up in peaches this week, so now I will add this to my list of what to make!
Oh man, that cobbler, it looks just like grandma’s recipe-that sounds good! We haven’t had many friends who are hurting in our lives until recently, we’ve had two who have lost parents. We’re praying about how we can be there for them during such a difficult time. Peach cobbler seems like a great start!
The cobbler recipe is great, but I wonder if it is the real meat of this posting? The quote from David Timm is so true, we want to present ourselves to the world as perfect, wonderful people, when in truth we are hurting and aching for someone anyone to care. Thank you Sandy for reminding me that we all need to reach out to those who are hurting, be it a death, a divorce or a financial crisis REACH OUT, be JESUS to them. You just might be the only JESUS they see at that time…

Now, I confess…when it comes to desserts, I am usually of the mind that fruit has no business being involved. Fruit is what you snack on when you DON’T eat dessert. I do not like fruit in my ice cream, or fruit in my cake, etc. HOWEVER!
I. Love. Cobbler.
I’m fickle. What can I say? I need to go home and make this peach one RIGHT NOW.

this is a great cobbler – we did a very similar one in girl scouts – it was the first cobbler i learned and we called it the one cup cobbler ( i guess because of the 1 cup sugar/flour??)
On family night when it’s just us, i halve peaches, pit them and put them in a meatloaf pan (holds peaches upright) open a few packets of apple cinnamon oatmeal into a bowl and mix really well so that the sugar and oatmeal isn’t lumpy and is mixed well, and then sprinkle heavily over the halved peaches and top generously w/butter. Heat through, and top w/ice cream. That’s a cheater one serving cobbler-like dessert.

This the best peach cobbler recipe. I have used it for years. I originally found it in an anthology of southern Junior League recipes. Easy and sooo good. Enjoy!
I’ve never made a cobbler before and I’ve not had any particularly hurt friends – which is a good thing of course! We do have some friends who could do with a bit more support and love though – maybe I’ll invite them over for a simple weeknight meal – thanks for the inspiration as always!
