EASY Tuna-Stuffed Peppers Appetizer

I’m always looking for a “lighter” bite, something besides chips and heavy dips, and I think I came up with the perfect recipe.

I’m a tuna gal, I’ve always loved it, I used to can it (100# at a time, fresh off the Oregon coast), and it’s great in salads, sandwiches, and appetizers. So much so, I’ve included a tuna round-up at the bottom of this post. My favorite way to eat it is a tuna melt with zucchini relish on top. Oh, boy! {I just did a massive search and I’ve never posted my Zucchini Relish recipe – so it’s coming this summer!}

Stein Butte

Sunday this week, my husband and our friends wanted out of the Rogue Valley fog, so we went on a beautiful hike. The trail is called Stein Butte, up past the Applegate Lake (outside of Jacksonville), and to the top, it’s about 4.9 miles. We didn’t hike the whole thing, but we plan to return when we’re better prepared to blaze the almost 10 miles.

For local readers, Stein Butte is a trail that starts at Seattle Bar, and offers hiking, horseback riding, mountain bikes or motorcycles. We only saw one other couple on the trail!

Applegate Lake trails

Hiking at Applegate Lake offers a variety of trails. There’s Payette trail, a lakeside 9.2 mile trail. And Da-Ku-Be-Te-De trail that loops you on the edge of the 17.5 mile Applegate Lake.

Collings Mountain trail takes a loop up to the Big Foot trap. Hiking to the Big Foot trap is the easiest hike for all age groups. Going further up, Collings Mountain is open to horseback as well as mountain bikes. There’s Grouse Loop trail,  much steeper, making a loop of 2.8 miles, located just across from the entrance of Hart-tish Park.

Which ever trail you choose it offers the beauty of wild flowers, wild life (gorgeous trees!) and the view of Applegate Lake and the surrounding mountains. The trees were my favroite on our Sunday hike!

Good snacks. Good friends

The Madrones and Manzanitas were fabulous, there was one view of a snow-capped mountain, we made it around and over the obstacles of fallen trees, and we stopped at the top for a snack and rest and to enjoy the beauty. We took plenty of water, tea, snacks (below–almonds and apples), and good conversation. It’s really fun to hike with good friends with whom you can talk about life.

Home to a healthy dinner, I really am trying to reach for the right foods, more water, tea at night before bed, and healthy bites!

Tuna-Stuffed Peppers

These bites today are made with tuna, plain Greek yogurt, a dash of salt, and sweet pickles. I cut some fresh thyme from our garden, and stuffed DeLallo tri-color Pepperazzi spicy, sweet peppers.

Added the toothpick, and a fresh herb.

Game Day appetizer

One recipe makes about 16, perfect for Game Day bites, a luncheon appetizer, or keep made up in the fridge for an afternoon bite or two. I love the sweet and spicy combo, totally gluten-free, and actually I just thought of something….

Tuna-Stuffed Peppers Appetizer

It might be best to make a double batch, because they’re so good. Too good!

Tuna-Stuffed Peppers

Makes about 16 stuffed peppers. Make Ahead Tip: Cover and refrigerate stuffed peppers. Shopping tip: Look for red or tricolor jarred sweet-spicy peppers, near pickles and olives or at the “olive bar,” in well-stocked supermarkets and specialty-food stores. I always buy DeLallo brand.

Ingredients
 

  • 10 oz. jar spicy-sweet peppers, about 16
  • 1 6- ounce can chunk light tuna packed in water, drained well
  • 1/4 cup plain Greek yogurt
  • 2 sweet pickles, finely chopped
  • Salt and fresh ground pepper to taste

Instructions
 

  • Lay 16 whole peppers on a platter.
  • Combine drained tuna, Greek yogurt, salt and pepper in a medium bowl.
  • Fill each pepper with about 1 tablespoon of the tuna mixture.
  • Grind some pepper over the stuffed peppers.
  • Place a toothpick in each bite. Chill and serve.
