Light Garbanzo Pesto Dip
This delicious Light Garbanzo Pesto Dip is a creamy mixture of mashed garbanzo beans highlighted by pesto and sun dried tomatoes.
When I think about food and cooking, and the ease of sharing it with others, I wonder why we don’t do it more often? Even when you’re not a great cook, there are easy recipes, and great options at the grocery store!
Light Garbanzo Pesto Dip
Tonight, new friends invited us to dinner, and I brought this delicious Light Garbanzo Pesto Dip!
With an option of veggies and crackers, a healthy serving is 1/4 cup per person.
I lightened it up with “light” sour cream.
It was so easy to make, and truly a hit!
Remember, hospitality is about serving others. It’s making them feel warm and welcome in our space, whatever that space may be. It’s about getting our minds off of ourselves and our circumstances.
Whether taking a meal to others, or inviting guests into my home, or even getting a date to meet at a restaurant, it really comes down to this: blessing others, or being a blessing to others.
It’s going against the urge to serve myself, and instead finding someone else to serve.
It’s about doing, and not just talking. I love that.
There are days when my selfish nature wants things to be all about me. And I forget that “doing for others?” is important.
I get wrapped up in myself, and my mind tells me not to worry about others, they’ll be fine.

You may be scared and nervous, and want to say no to hospitality.
What I say is, don’t use your mind, in this matter.
Use your heart and just say yes … heart over mind.

Light Garbanzo Pesto Dip
Ingredients
- 1 can, 16 oz BUSH’S® Garbanzo Beans, rinsed and drained
- 1 cup light sour cream
- 1/2 cup prepared basil pesto, usually in a jar, found in the Italian/pasta sauce aisle
- 1/2 cup chopped sun dried tomatoes
- 1/2 cup red onion, diced
- 1/4 cup fresh basil, chopped
- 2 Tbsp lime juice
- Salt and pepper
Instructions
- Coarsely mash garbanzo beans with fork or pastry blender. Stir in sour cream, pesto, sun dried tomatoes, red onion, fresh basil, lime juice; add salt and pepper to taste. Cover and refrigerate for 1 to 2 hours.
- Serve with assorted crackers and cut up fresh vegetables. Garnish with fresh basil.
